Instant flour - I usually think of Wondra which is a brand name.
Instant flour is a low gluten flour that has been partially "cooked". The advantages of a low gluten flour and having it partially cooked is that it won't clump up as easily where the instant flour is used as a thickener where you can add directlly to the liquid with out making a slurry or roux.

It is flour that does not need sifting. If you recipe calls for sifting the flour and you don't want to, look for non sifting flour.
This flour is already sifted finely. But us old folks still prefer the sifted kind to make home made cakes and pies and cookies. It depends on you

i never heard of instant flour but they have fast rising flour which is flour that will rise quicker than regular flour...!!!
