When you crush the sugared candy in your mouth on the molecular level you're separating molecules as a result a spark is emitted. These small sparks excite nitrogen molecules in the air, which subsequently emit mostly ultraviolet light.

Wintergreen Lifesavers contains is methyl salicylate, which gives it the wintergreen flavor. Methyl salicylate, it turns out, can absorb the ultraviolet light given off by the nitrogen, and re-emit it as visible light.

It's called a piezo-electric effect. Other candies (certain color Necco wafers) do it too.
