Fresh Fruit Pizza with Lemon Curd
This is so fresh. I used lemon pie filling and omitted the plums and it was perfect.
The lemon curd not only holds the fruit in place, it serves as an exquisite anchor for all the flavors. You may have never imagined such a pizza. Now you'll never forget it. It's best served the day it's made.
RECIPE INGREDIENTS
One (18 ounce) package refrigerated sugar cookie dough
Cooking spray
2 tablespoons seedless raspberry jam, melted
3/4 cup Lemon Curd
2 cups fresh raspberries
2 cups blackberries
1 cup sliced strawberries
1 plum, sliced
2 teaspoons sugar
RECIPE METHOD
FOR THE SUGAR COOKIE DOUGH:
Preheat oven to 350 degrees F.
Press dough into a 12-inch pizza pan coated with cooking spray. Bake at 350 degrees F for 12 minutes or until golden brown. Cool completely on a wire rack.
FOR THE FRUIT PIZZA:
Preheat broiler.
Spread jam over crust. Spread Lemon Curd over jam; arrange raspberries, blackberries, strawberry slices, and plum slices on top. Sprinkle sugar over fruit; broil 3 minutes.

Yummy Fruit Pizza:
37 min 25 min prep
12 servings
1 (16 1/2 ounce) package Pillsbury sugar cookie dough
1 (8 ounce) package Philadelphia Cream cheese
1 1/2 cups powdered sugar
1 1/2 teaspoons milk
2 kiwi fruits
1 banana
5 strawberries (any other fruits you would like to add also)
1. Roll out cookie dough flat onto a prepared greased cookie sheet.
2. Bake by instructions.
3. This is very good with a chewy texture.
4. Be sure not to overbake.
5. Mix with a mixer cream cheese, powdered sugar, and milk.
6. Spread this on top of cooled cookie.
7. Slice all fruits as thick as you like.
8. Drop randomly, or you can decorate with your toppings.
9. Chill or serve immediately.

Fruit Pizza
Ingredients
1 (18-ounce) package refrigerated cookie dough
1 (8-ounce) package cream cheese, room temperature
1/3 cup sugar
1/2 teaspoon vanilla extract or other flavoring (almond, orange, or lemon)
Fresh blueberries, banana slices, mandarin orange sections, seedless grapes, strawberry halves, kiwifruit (or any other fruit you want), well drained
1/2 cup orange, peach, or apricot preserves
1 tablespoon water
Instructions
Preheat oven to 375 degrees F. Line an ungreased 14-inch pizza pan with cookie dough cut in 1/8-inch slices, overlapping slightly. Bake 12 minutes or until light brown; remove from oven and cool on a wire rack.
In a medium bowl, combine cream cheese, sugar, and vanilla extract or other flavoring; spread over cookie crust. Arrange fruit over cream cheese layer in any design you want (use your imagination).
In a small saucepan over very low heat, make a glaze by heating preserves and water. Brush glaze over fruit, making sure to cover the fruit that will turn dark. Refrigerate until ready to serve.
Note: This does not keep well, so plan on using it up. You may also use your own sugar cookie recipe in place of the refrigerated dough.

Fruit Pizza

1/3 cup sugar
4 cups assorted fresh fruit such as strawberries, bananas, kiwi, blueberries, etc (any fruit really)
Preheat oven to 350 degrees. Place dough on round baking stone and cook 18-20 minutes until golden brown. Remove from oven and cool. For topping, combine cream cheese and sugar and spread over cookie dough, then start placing on the fruit.

Hi Rachael My first job that I did was pizza maker, I did all kind of pizza, from classical Italian to breakfast pizza,also Asian flavor, Mexican, and others.
The most important ingredient for a pizza is the crust, sauce,spices& fresh herbs, cheese, and combination of topping. Keep that in mind. If I make a savory fruit pizza, I start with the combination of topping as Gorgonzola (blue cheese), or brie goes well with fruit, as pears ( Bosch, Asian, Bartlett, ...), Strawberries , and fresh figs. Now in this case we have crust, cheese, topping but not sauce, the solution is to spread the crust with olive oil and little of garlic. Also if I make a dessert fruit pizza, then my first idea is yogurt and berries or cheesecake pizza. Now I have my basic crust, sauce( ricotta cheese or yogurt, milk, sugar, vanilla, Cinnamon), topping( any berries mix or you favorite only), cheese(not necessary because you cheese is in the sauce, if you like cheesy than add a mild cheese as fontina, and here you have.
My point that I want to make is that you can put anything on pizza just fallow the simple rules, basic pizza dough , good sauce, fresh herbs, and research the combination of topping.

Chocolate chip cookie for the crust, sweetened cream cheese for the topping and then the fruit. I seen it on t.v many years ago and wanted to try it. I had forgotten about it until this post so I'm going to try it now.
