rice pudding is nice made with it...the cardomon gives it a lovely unusual taste! Put it in a bowl add evaporated milk to make it 'sloshy' but don't drown it. A few spoons of sugar to taste (teaspoons) Add a touch of orange rind grated (or try lemon) and a few sultana's and microwave until the milk is absorbed.
Have you got any leftover meat? if so chop it up and add it to the rice....add a few pea's, cubed cheese (tiny cubes) and any other bits you fancy out of the cupboard and fridge that need using up.....there is always a bit of veg lurking in the fridge!!....... and squeeze into ball shapes with your hands. Coat in egg and breadcrumbs and deep fry until golden brown. Serve with something tomatoey...like leftover dips (mexican) salsa and a salad.
You could also use it to make a savoury rice dish. Sliced cubed ham, mixed into it in a pan, scramble some egg and throw that in......a strip or two of red/yellow/green peppers diced into it as well......season with a stock cube (chicken probably best) and find a bottle of sauce you like and add a dash.....soya/chili/worcestershire but don't go mad.

Leftover rice muffins.
1 cup rice
1/2 cup grated cheese
1/4 cup black olives or green olives
onions or bell peppers or dill pickles (what ever you decide)
leftover over ham or chickens or turkey or 1 can tuna or salmon (anything goes)
1 egg

Have rice cooked add the ingredients you want mix altogether add s& p put into very small muffin tins, sprayed with Pam.
bake 400 for 10-15 minutes the cheese& egg will bond altogether.
let cool they are easier to get out this way.
Very good in lunches, appitizers I take them to parties.
(the rice when all mixed together should be moist but not mucky).
most of the time I do not measure just throw everything in I want adding more cheese or maybe an extra egg depending on the quantity of everything I've thrown in.
try it, you'll like it.

You could always make Kheer which, as you probably know, is Indian rice pudding. Since you are not starting from scratch, I would simply put the rice in the top of a double boiler with some milk, sugar to taste and a crushed green cardamom pod ... cook until thick, cool - add a little fresh cream if you wish
Here is a nice recipe I found online:
Indian Egg Rice
*******************
1 cup of cooked rice
2 eggs
teaspoon of ginger/garlic paste
teaspoon of garam masala
1 finely chopped onion
green coriander leaves
curry leaves (kadi patta)
3 teaspoons of oil (or ghee)
mustard seeds (black mustard)
salt

put the oil into your kadhai or a skillet, over low heat do the mustard seeds until they pop, add the onion and curry leaves, then when those are done (transparent: onion), add the g/g paste, the garam masala ... fry it all nicely then add the beaten eggs and stir ... when that is all done, add the rice and mix it ... put it on a plate or thali and garnish with coriander

How about stuffed bell peppers or stuffed cabbage?
Basically make a spaghetti sauce: tomato sauce, browned ground beef, onions, oregano, garlic, salt pepper. Cook sauce and mix the rice in....you want about equal parts sauce to rice. Cut the tops off of the peppers and devein/deseed. Parboil the peppers in boiling water for 5 minutes. Remove and drain. Stuff peppers with sauce/rice mixture. Top with freshly grated mozarella or parmesan cheese. Bake in the oven until the sauce is hot and the cheese is melted.
For stuffed cabbage parboil whole leaves of cabbage for a couple of minutes then dry with papertowel. Fill leaves with sauce/rice mixture and roll up securing with a toothpick. Bake in the same manner as the peppers.

I was taught that rice is very dangerous as far as storing and reheating. I'd just chuck it, its really cheap, just try to make enough rice to use and not any extra. Its not worth risking food poisoning over a bit of cheap rice,

How about a black beans and rice dish? I use "Tommy's Rice and Beans" from epicurious.com. Or you could do a red beans and rice.
This of course is all dependent on how you flavored the rice last night.

You could always chuck it into a stir-fry but - be careful - left over rice can harbour bacteria and can cause stomach upsets.
Only use it if it has been kept in the fridge. Discard it if it hasn't.

You could do a stir fry, all you need are vey basic ingredients such as peas, beaten egg, maybe some ham, onion and anything else you wish to throw in.

i make this with my left over basmati rice its really good.....slice onions as much as you like and accoding to the quantity of ur rice.......put some oil in the pot fry the sliced onions with ginger garlic paste...(for one onion 3 tsp ginger garlic)....fry till golden add rice....mix well...mix till fully heated.....ur dish is ready!......
or else there is this indian dish...in english known as lemon rice....take out the lemons juice.....fry sliced onions(lots)...with peanuts and curry leaves and chopped green chillies....when onion is tender....remove from heat and add in the lef over rice and mix well add the lemon juice mix well...add salt if u want and more lemon juice if u like it....the rice should be at room temperature remember!...your dish is ready...... these 2 recipes could be eaten with chutney as well!
or how about fried rice, i make it with left over basmati rice and it tastes yummy! the left over rice should be refrigerated and it makes good fired rice because each grain wont stick to each other.....chop carrots, capsicums, spring onions and stir fry for 4 to 5 mintues....fry eggs seasoned with salt and pepper and scramble it into tiny bits......heat a tbsp butter fry 3 tsp chopped garlic till golden add the rice and veggies and fried eggs....mix well addd ajinomoto and soya sauce about 2 tbsp...keep mixing...till fully heated...ready to eat!
