Artichoke and Tomato Dip

28 ounces crushed tomatoes, Libby's -- drained
1 can artichokes -- drained
fresh lemon juice -- to taste
fresh garlic -- to taste
salt and pepper -- to taste

1. Place tomatoes in bowl.

2. Chop artichokes. Add to tomatoes.

3. Add lemon juice, garlic and salt and pepper to taste.

4. Place in refrigerator until chilled.

You might try using a White Mountain Bread from your local deli to dip with.

Looks like something to serve with a good, firm cracker, or restaurant style nachos. You could maybe throw in a little chili powder, and if you want to spice it up, a sprinkle or 2 of cayenne pepper. But I also think it's fine the way it is. I'm sure that fresh garlic is crushed. I never buy the stuff in a jar... I use my garlic press, or just "mash" it with a big knife and chop finely. throw some celery sticks on the try too if you like... seems like they'd work well to hold the mixture.

I would toast a baguette that had been sliced and place this dip on it. You could also put this on a bed of lettuce or celery sticks. Would be very good on a veggie tray.

Slice up a nice bread into thin slices and lightly toast or broil with a little butter or olive oil and Parmesan cheese.

WoW, that recipe sounds really "YUMMY!!!" And to go with it, some good old fashioned Lay's with ridges, would be suffice, I would think!!! Or maybe even some corn chips, would go good, or you could put a bowl of both out, and let everyone decide, you know!! Good Luck, to you!! Smile!!!!

If you cut pita breads in quarters...rub them with olive oil...sprinkle with salt and pepper...then put them in a 450 oven till browned and crispy...that would be tasty.

Maybe you could sort of turn it in to a brushetta( Ligtly toasted bread with dip on top)

Maybe some pita chips or bagle chips. I'd go with the "original" flavor or sea salt.

I would serve with tortilla chips...it's sort of like a salsa.
or Toasted baguette bread like bruschetta.
