Make an alfredo sauce with some luguini and add the smoked salmon to it. Its out of this world good and I eat salmon all the time.

Appetizer: Smoked Salmon Pate

6 tablespoons olive oil
4 slices day-old French bread
1 pound unsalted butter, room temperature
14 ounces smoked salmon
½ cup finely chopped green onions
1 cup sour cream (or can use half plain yogurt for a more zesty flavor)
Freshly ground black pepper to taste
Juice of one lemon

Sprinkle olive oil over bread. Break bread into pieces and place in bowl of food processor. Add butter, salmon, green onions and 2 tablespoons lemon juice. Process briefly to combine. Add sour cream and process until mixture is smooth. Season to taste with pepper and additional lemon juice. Chill until ready to serve.

Serve this easy spread with assorted crackers.

SALMON PUFF

2 (7 oz.) cans smoked salmon
1/2 c. hot milk
3 tbsp. butter or other fat, melted
3/4 tsp. salt
Dash pepper
2 eggs, separated
2 c. mashed potatoes
2 tbsp. butter or other fat, melted
1/2 c. dry bread crumbs

Drain and flake salmon. Beat the milk, butter, seasonings and beaten egg yolks into the mashed potatoes. Stir in the fish, and fold in stiffly beaten egg whites. Place in a well-greased casserole dish. Combine butter and crumbs; sprinkle over casserole. Bake at 375 degrees for 45 minutes, until brown. Serves 6.

SALMON CASSEROLE

1 can mushroom soup
4 oz. pimento, chopped
1 c. elbow macaroni (measure before cooking)
1 lb. can salmon
2/3 c. milk
1 c. grated cheese
1/3 c. bread crumbs

Mix all together; place in a greased casserole dish. Bake at 350 degrees for 30 minutes.

Southwestern Smoked Salmon Pita Recipe with Chipotle Sauce

This is a quick, great tasting sandwich that's a little spicy. The sauce is best prepared before hand to let flavors blend. Original recipe yield: 4 servings.

Ingredients:

1 cup plain nonfat yogurt
4 tablespoons chopped green onions
2 chipotle peppers
4 tablespoons peanut butter
1/4 teaspoon salt

16 ounces of smoked salmon cut into strips
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon chili powder
1/2 teaspoon garlic powder
1/2 teaspoon dried oregano
1/2 teaspoon ground cumin
3 tablespoons vegetable oil, divided
1 medium onion, sliced
1 red bell pepper, julienned

4 (6-inch) pitas
1 cup shredded lettuce
1 cup shredded white Cheddar cheese
Directions:

In a blender or food processor, combine yogurt, chopped green onion, chipotle peppers, peanut butter, and 1/4 teaspoon salt. Blend until smooth.
Place in a sealed container, and refrigerate.
Preheat oven to 350 degrees F (175 degrees C).
Place smoked salmon in a large bowl. Mix together 1/2 teaspoon salt, pepper, chili powder, oregano, and cumin; sprinkle over smoked salmon. Heat half of oil in a skillet over medium heat. Saute onions and red peppers until tender; transfer to a plate, and set aside. Wrap pitas in foil, and place in oven for about 10 minutes.
Heat remaining oil in skillet, and saute smoked salmon until slightly brown. Add the onions and red peppers, and cook for another minute.
Cut pitas in half, and stuff with smoked salmon mixture. Serve with lettuce, cheese, and chipotle sauce.

Chop the salmon into small pieces then mix it with sour cream and scallions. Then cut small pieces of bread and fried it in olive oil and garlic. Once done use the bread to dip and eat he smoked salmon cream dip.
