i'm 13 yrs old and I want to cook meals for my family,family of 5 including me tonight i'm cooking pasta with tomato sauce, but I don't know what to cook for tomorrow. I'm trying to eat healthily so i'm trying to make my meals from scratch like soups etc.. any recipes will be greatly appreciated and i WILL reward best answer..xxx

GREEK SALAD MY WAY :

Diced cucumber
diced tomatoes
feta
kalamata olive
sliced onions (optional)
spring mix
salt & pepper
Olive oil
balsamic vinegar

Put all the ingredients in a bowl and toss


GREEN BEANS & TOMATOES :
Boil or steam the beans for a few minutes.
In a frying pan, put some butter, sliced onions, whole or diced
peeled tomatoes (drained of the juice).
When the liquid you'll get has evaporate a little add the beans, salt and pepper and stir.
Cook on medium heat until the tenderness you like.

CHICKEN LIVERS SALAD :
chicken livers
sliced onion
a little butter
raspberry vinegar

In a pan, put the butter and the onions, and when a little golden, add the livers.
Cook on medium heat. When almost done, add the raspberry vinegar and let reduce the juice a little.
Eat with the salad

GRILLED VEGETABLES :
4 zucchini
2 eggplants
4 yellow zucchinis
olive oil
thyme, salt & pepper

In an aluminium foil, put all the vegetables that you would have sliced or diced,
the salt, pepper, thyme and olive oil,
close the foil but leave a little opening, cook on the barbecue.
You can eat it cold as an appetizer, or hot as a side dish. Very simple and very tasty.

In fact you can do the same proces with any vegetables.
Asparagus and Portobella or wild mushrooms are great like this.

CAULIFLOWER GRATIN :
Clean and boil the cauliflower for about 8 minutes.

On the side, make a sauce like this : 30 grams of flour
30 grams of butter
salt & pepper
a touch of nutmeg
1/2 liter of whole milk

In a pot, melt the butter, add the flour and when golden a little,
add the milk, salt, pepper and nutmeg.
With a wisk, mix it all. Then use a wooden spoon until the sauce is thick.
It takes a little while, but don't stop stiring.
Put a little of the sauce in the an long oven dish to cover the bottom,
then the cauliflower and pour the rest of the sauce all over.
Add the shredded gruyère on top (trust me, this cheese is the best
if you need melted cheese, and you can find it in every supermarkets),
put in the oven until
the cheese is golden, checking on the cauliflower, it can't be too cooked.

You can do the same gratin with :
-Big macaroni (again boil the pasta first, just that when keeping
on cooking in the oven they won't be over cooked, put in oven dish, pour sauce,
gruyère on top, oven at 380°)
-Leeks
-Endives wrapped in ham (boil the endives a little first, then drain water,
in 1/2 slice of ham, put a little of shredded gruyère,
wrap the endives one by one, put in an oven dish, pour the sauce, put gruyère on top, oven.
Kids love gratins.

CABBAGE & SALTED PORK :
Boil the cabbage leaves for about 3 minutes (in salty water)
In a pan, put butter, sliced onions, and diced salted pork (cut out the white fat).
Add cabbage. Cook on medium heat
You can also add sliced potatoes, but put them first as they are longer to cook

RATATOUILLE (for 6 people) :
4 zucchinis
4 bell peppers of different colors
3 eggplants
2 big onions (sliced)
5 crushed garlic cloves
thyme & bay leaves
1 cup of olive oil
2 big cans of whole peeled tomatoes
salt & pepper

Diced the vegetables (all of them), not too thick and not thin.
In a pot, put the butter, the sliced onion, crushed garlic.
When the onions are golden, add the peeled tomatoes (drained
the max you can of their juice), the
thyme and bay leaves, salt pepper (a little).
Let the liquid evaporate and then add first the bell peppers,
salt & pepper ( a little), then 10 minutes after,
the zucchini & eggplants, salt & pepper, a little.
You can serve this hot, or very cold as an appetizer

TOMATOES PROVENCALES (fast & easy) :
Cut the tomatoes in half.
Put a touch of olive oil, salt, pepper and crushed garlic, shredded parsley and
bread crumb (the thin kind) on top of each pieces of tomatoes.
Put in the oven at 400° but careful that the tomatoes remain firm and don't overcooked.

FLANK STEAK, SHALLOTS & VINEGAR :
1 big flank steak (or skirt steak)
tons of sliced shallots
1 1/2 glass of vinegar
butter
salt & pepper

In a pan, put some butter, then when melted, add the shallots, a little salt & pepper and
when golden, take them out and put the steak in the pan, salt & pepper again.
Cook on medium heat. When golden on both size, add the shallots and the vinegar and
let it reduced a little. When you have an homogeneous sauce, it's done.
Serve with a gratin, boiled potatoes, or fresh pasta

POT AU FEU (for 4) (hearty meat dish for cold days)

a piece of beef (not too dry, and with a lot of marble)
5 leeks (1cut in pieces)
6 carrots (2 cut in pieces)
4 turnips
4 potatoes
8 cloves of garlic
1 onion pierced with 4 cloves
thyme and bay leaves
pepper corn
salt

In boiling water, put the onion the garlic, the pieces of carrots and leeks, thyme, bay leaves,
pepper corn and rock salt, and finally the meat.
Cook on medium for at least 1h15, then put the turnips, then the potatoes, then the carrots, and last the leeks.
When the vegetables are cooked, it's done.
Serve hot with Dijon mustard

If you have some left over of vegetables, use the water too make a soup, it's very good


SCALOPINIS MILANESE :
Veal scalopinis
2 eggs
bread crumbs
butter
1 lemon
salt & pepper

Scramble some raw eggs, dip the veal scalopinis in it, then in bread crumbs (both sides).
In a pan, put some butter & a touch of sunflower or peanut oil, and cook the veal on medium heat. Salt & pepper.
Eat with a splah of lemon

I have a wonderful recipe for baked corn. We don't have a family gathering without it !!! 2 Cans of cream style corn 1 Can whole kernel corn 1 6 1/2 oz.,or 8 oz. Corn muffin mix 4 eggs beaten 1 tsp. salt 1/4 cup sugar 1/2 cup melted or soft butter or marg. 1 1/2 cup shredded cheddar,or monterey jack cheese Mix together all ingredients,pour into a 9x13 greased cake pan. Bake for 1 hour, @ 350 degrees, check corn by sticking a knife in center,if comes out clean,it is done,otherwise bake another 10 mins. Cut into squares and enjoy the best baked corn you will ever eat !! My mom gave this to friends that have a restaurant,and this is always on the Sunday special,never any left over. We got this recipe from an aunt in Missouri, and we sure are enjoying it in North Dakota !!!

Make an easy stir fry

3 1/2 chopped chicken cutlet
2 bell peppers (red, yellow, orange, green doesnt matter)
1 head of broccoli
3 tablespoons of olive oil

Cut vegetables into one inch pieces. .Fry ingredients together in a skillet until throughly cooked. Serve over rice

If you have a slowcooker/crock pot in the house..this is a very easy healthy meal for you family*

peel and chop carrots
peel and chop onions
put in bottom of crockpot
put either chicken (breasts or legs or thighs) OR porkchops
ontop of the carrots and onion
pour some BBQ sauce ontop
add 1cup water
put lid on, turn dial to Low setting and leave it for the day. 5-6hrs.
before serving make some 5min rice

3 Bean Soup

1/3 cup olive oil
1 bunch green onion, chopped
2 stalks celery, chopped
2 cloves garlic, minced
4 cups chicken broth
1 tsp. thyme
1 tsp. marjoram
1 bay leaf
pepper to taste
1 can kidney beans
1 can northern beans
1 lb. string beans

Heat oil in large cooking pan. Add onions, celery, garlic, and sautee.
Add remaining ingredients EXCEPT green beans. Bring soup to boil, then simmer for 20 minutes. Add green beans and simmer for 20 mintues. Add broken spaghetti if desired.

'Healthy and Easy Chicken and Biscuits Casserole

1 (10 3/4 ounce) can low-fat cream of celery soup
1 (10 3/4 ounce) can low-fat cream of potato soup or low-fat cream of chicken soup
1 1/2 lbs chicken breasts, cooked and cut up
4 cups frozen broccoli carrots cauliflower mix
1 cup skim milk
1/4 teaspoon dried thyme leaves
1 teaspoon dried parsley
1/4 teaspoon celery seeds
1/4 teaspoon paprika
1/4 teaspoon pepper
1/4 teaspoon savory
1 (16 1/3 ounce) can refrigerated reduced-fat buttermilk biscuits

Blend soups and milk in large skillet on low heat.
Add herbs and spices and mix well.
Add cooked cut up chicken and frozen vegetables.
Heat to warm vegetables and chicken.
Put in large ovenproof dish and bake in 400 degree oven for 15 minute.
Take chicken dish out of oven and stir well.
Cut up biscuits into fourths and top chicken with biscuts.
Bake another 15 minute until biscuits are browned.


and for dessert try this:
Banana Bread
1 cup mashed ripe bananas (about 2 medium)
3/4 cup sugar (or splenda)
1/4 cup vegetable oil
1 large egg white
1 large egg
1 3/4 cups flour
1 1/4 teaspoons cream of tartar
3/4 teaspoon baking soda
1/2 teaspoon salt


Preheat oven to 350.
Combinen first 5 ingredients in a large bowl; beat with a mixer at medium speed until smooth.
Combine flour, cream of tartar, baking soda, and salt in a bowl, stirring with whisk. Add flour misture to banana mixture, stirring just until moist.
Spoon batter into an 8x4 inch loaf pan coated with cooking spray.
Bake at 350 for 40 minutes. Cool 10 minutes in pan on a wire rack; remove from pan. Cool completely on rack.
To freeze, wrap tightly in plastic wrap, and place in a heavy-duty plastic bag. Good for up to a month.
