Eat only vegan in front of her to make her happy.Or buy some synthetic leather shoes and buying cruelty free makeups/cosmetics and show her you are trying to make a difference in helping animals.

It's hard to know why another person goes on any diet.
Maybe she does it for the animals or maybe she is trying to lose weight and be more healthy.
But either way, it is for a good cause.
Neither of you should make a big deal about what the other one eats, It's your choice and her choice.
If you're going to be together, eat together, you should respect each others choices.

most people do that when they first make a drastic change. I am guilty of it too. Its like we have this new found knowledge and want to tell the whole world. Plus, deep inside, she probably truly misses the foods she has been raised on. Be supportive of her, but make it clear you are not in the same place as her, and that you wont judge her if she wont judge you. Agree to disagree, and that should help. Realize that she is making a huge change, and it will take her body time to adjust, as well as her mind.

What exactly to you want to help her do?

Tell her that her tactic of being rude is not effective and let her know what she can do to successfully encourage you to become vegetarian/vegan.

When she changes tactics to something less rude, show your appreciation by becoming vegetarian.

If you want to help her lose weight, get the book "Eat to Live" by Dr Fuhrman. It advocates a safe reduced calorie diet in line with her ethics.

Also be her exercise buddy.

Well you could try talking to her ..... ask her why she chose to become vegan, and ask her why she is condemning you for haivng a different set of priorities to her, and how she expects to justify her hyipocracy of chosing something different now that she didn't choose before, without allowing other people the right to choose as they wish to from any one point in time to the next.

Be the same to her, but pro-meat.

Bug her about not getting enough protein and iron.

Being vegan doesn't make a person thin.

The only thing you can do is either not eat anything around her, or just stop hanging around with her completely.
