About 12 hours. But that's "SMOKED", not over a bunch of hot coals. The temp should be kept around 150-200. And make a beer mop to keep the outside moist. If you don't like beer use a red wine.

This is cheating but if you have an HEB, their precooked brisket is as good as homemade.
