Coming from a family in which a lot of us are not related by blood (many by marriage or adoption) I would just say, "that's my second cousin" or "that's my cousin's son/daughter." But of the options you provide I think "my adopted cousin's child" sounds the best...

your uncle married a woman who becomes your aunt. Their adopted children become your adopted cousins. When those cousins have children they to you are "first cousins once removed." to your children they would be second cousins -- children of first cousins. No one ever says "first cousins once removed," but that's the phrase that accurately describes a cousin relationship with one generation's difference between the two. In conversation, "my adopted cousin's child" or "the child of my adopted cousin" would be more correct than alternative #2

Well to be nice, I would just say "this is my cousin"...but if you want to throw in the adopted part, I'd say "my adopted cousin" I would leave out the "second" part b/c it doesn't matter all that much.

How about just my cousin. They are family now. I do not know why you have to use the word adopted at all.

Why would you have to bother mentioning that the cousin was adopted to begin with? Just say it's my cousins baby/my second cousin. Seems simple enough to me.

You would refer to them as your cousins or second cousins and so on. If you constantly refer to the fact that they are adopted then you are letting them know you do not accept them as members of your family. It is no ones business if they are adopted or not if they want anyone to know let them tell.

Technically, they are your second cousin, or your first cousin once removed. Adoption doesn't make a difference in how you call it, in my opinion.

id say they are your cousins make them feel as though they are part or the family. being adopted is hard enough so treat them as thought they are biological. if you need to explain to whoever you are elling the story. i have an adopted cousin and i call her my cousin its not harning anyone to say that.
