How about something they can use in their future classroom. Maybe a personalized desk caddy or something like that? If you can't think of anything, money's always popular! =;o)

Well, depending on how close you are and the money you are willing to spend, but a computer is nice and usefully. What about a gift certificate to Barnes and noble, staples or Amazon so they can buy supplies for their classroom.
OR,
Money is great. College grads often have thousands of dollars in student loans. Any money received would be a huge help in starting to pay those back.

I am a teacher, so I can tell you a few things I think are good if the person will be taching in the fall.
1. Gift certificate for Staples or other office supplies store
2. Notepaper with monogram
3. Gift certificate for a store to buy work clothes
If he or she does not have a job yet, give them a gift certificate to buy a suit to go on interviews.

You can give that family member a stuffed animal that has graduation themed clothes on it. Build-A-Bear Workshop would probably have that in stock and you would have fun making it yourself. I would also get some pencils with the apple erasers on top and place it in a teacher themed vase or coffee mug. A graduation picture frame would be nice. Don't forget to place the family member's picture in there.

All good ideas, even the one about the gun and the vest. We have a couple stores in the area designed for teachers, they have everything a teacher could want for her class. Might want to check it out, and see if you have something like that near you, and get a gift card for her.
A gift card for the nearest arts and crafts store, like Michaels or Hobby Lobby would be cool, too. They have little projects for kids. Even one for a department store like K-mart, Walmart, etc, would give her access to scissors, constructiuon paper, crayons, pom-poms, and the like.
Is she going for her Master's right away? Money, then, would be a good choice.

A job.
...and a trip to Europe before he starts working. Get a Eurailpass and airline tickets, and membership with the Youth Hostel association for inexpensive accommodation and lots of chance to meet and chat with young adult peers also travelling from all around the world. He or She will feel really rewarded, and expand their horizons too. Its a very special reward for all the studying and stress they went through to achieve success in their studies.

I think something they can treasure is good. How about a caricature with them in their graduation robes or a framed stock certificate (e.g. Disney). They could put it up in their classroom.

Either a check or maybe something for their classroom when they start teaching (like a nice personalized picture frame for their desk).
