I am making multiple batches of pretzel dough and all of the sudden the dough texture of the last batch changed dramatically- all of the ingredients are being weighed and measured so I dont think its that.

You need to add a little bit more flour.

Sticky dough is too wet. Dough that not stick is too dry. Dough is a funny thing and really "Knead" to be in a correct area or be adjusted for Humidity and Temperature to work great. Even though it sticky, it may bake well, I would use a lower oven temp.

Humdity in the air can do that. Just add a tiny bit of extra flour to compensate. If you've been boiling any of the other batches already, that's where your humidity would've come from!

Try rubbing some Crisco on your hands before handling the dough.

Try to knead it in a little bit of flour. It should help.
