Hi !!!

*HAPPY BIRTHDAY TO YOUR MOM !!!!

Here is my suggestion...I made a similar frosting for a Dreamsicle Cake that I made for Easter, but I made it with vanilla pudding & I added 3 Tblsp. Powdered Sugar...It was GREAT!!!!

Pudding & Cream Frosting

A simple cream frosting that can be adapted to any flavour of instant pudding.

3 cups 5 min 5 min prep
1 cup whipping cream
1 (3 1/2 ounce) package instant pudding mix, any flavour
1 cup milk

In bowl, beat cream to stiff peaks.
Set aside.
In another bowl, beat pudding mix with milk on low speed for 1 minute.
Let set 1 minute.
Fold in whipped cream.
Chill until ready to use.

---------IF YOU EVER WANT ANOTHER CHOICE FOR A CHOCOLATE FROSTING...THIS IS MY FAVORITE ONE TO USE, IT IS FOR "TEXAS SHEET CAKE", A CAKE THAT BLENDS CHOCOLATE & CINNAMON...ENJOY!!!

1/4 cup plus 2 tablespoons milk (whole, 2% or skim - doesn't matter)
1/4 cup cocoa
1/2 cup butter
1 pound confectioners sugar, sifted (about 4 cups)
1 teaspoon vanilla extract
1 cup chopped pecans

Mix the milk and cocoa in a heavy saucepan (stir, stir, stir). Add the butter and, over medium heat, stir until the butter melts. Remove from heat and gradually stir in the sugar and vanilla until smooth. Add the pecans.
When the cake is just out of the oven, spread the frosting evenly on the hot cake.

Add any flavor instant pudding to a tub of cool whip topping. Just add the powder to it and blend . Don't actually make the pudding.
1 lg tub usually uses 1/2-1 of the large boxes of instant pudding.

You can also make a chocolate cake and put 1 teaspoon of INSTANT coffee granules into the cool whipped topping an mix. It will add a nice coffee flavor.

Divide the chocolate cake in half and spread cherry pie filling in the middle and put second layer on top then frost with the coffee flavored whipped topping. Grate chocolate shavings on top.

Make instant chocolate pudding but use a bit less milk so it is a little stiffer than normal. Then frost just the top of the cake by pouring it onto the middle of the cake and spreading it out to drip down the sides. Lastly take some baking cocoa (the powdered kind) put it in a sifter and sift it lightly over the top.
Happy B-Day to your Mom.

12 ounces bittersweet chocolate, cut into small pieces
8 ounces (2 sticks) unsalted butter, at room temperature, cut into small pieces
1/2 cup confectioners' sugar
3/4 cup unsweetened cocoa powder
1/2 cup strong coffee or water

1. In a medium heatproof bowl set over a pan of simmering water, melt the chocolate. When almost melted, turn off the heat and allow to melt completely, stirring occasionally.

2. While the chocolate is melting, in the large bowl of an electric mixer fitted with a paddle or beaters, beat the butter and sugar until fluffy, stopping the mixer occasionally and scraping down the sides of the bowl and under the beaters as necessary with a rubber spatula. Start on slow speed and, when combined, turn up the speed to high.

3. In a small saucepan, over low heat, dissolve the cocoa in the coffee, stirring as necessary. Remove from the heat, scrape the melted chocolate into the saucepan, and stir to combine thoroughly. On low speed, pour into the butter-sugar mixture, again stopping the mixer and scraping down the sides of the bowl and under the beaters. Beat until smooth and shiny. Transfer to a medium bowl and set aside until of spreading consistency. Use as needed.

TO PREPARE AHEAD:--Through step 3, frosting can be prepared 1 day ahead. Refrigerate, covered, until needed.

happy b'day 2 mummy!
