State on your invitatons...
"Lunch will be available for an extra fee".
It's not gauche at all to say this, and most people will appreciate knowing all the facts up front..

As long as you let people know right up front that its dutch, then I don't see a problem. However, you will not want to be spending a lot of time figuring out who ate what and who owes what. Check with the restaurant to see if they will do separate checks. Some don't. And be aware that they may include the gratuity on the bill in this type of circumstance.

Depending upon the size of your group, it might be best to arrange with the restaurant a set, limited menu at one given price inclusive of gratuity. This way you can advise people in advance exactly what the lunch will cost per person.

I'm unsure if you are giving invitations or if the Professor wants to invite club members or are you inviting club members.

I would state something like:

"You are invited to attend a luncheon at ___ etc....

Note: To all, the fees for for this luncheon will be the sole responsibility of each individual invited".
