isn't it like rotting cheese?

well... all cheese is just rotting milk, but rotting with good bacteria and molds that break down the milk sugars into flavorful compounds that are NOT poisonous to our bodies.

The mold is food, baby.
FOOD.
It is the best part.
Do you like olives?
Buy the huge green bleu stuffed ones. POP one in your mug
and I guarantee you you will have another and another and another and then........ you should try it on crackers.. one mans poison is an others nourishment.

There are lots of blue veined cheeses. The mold (pennicillium) is put there on purpose.
