Here's a SUPER SIMPLE ONE. Trust me - when you do this one, you'll end up making it all the time..... it's so easy, it's on the stovetop and it's really good.

Alton Brown had a whole entire show devoted to Macaroni & Cheese - he had the super sophisticated ones that bake in the oven, even had a few ideas on what to do with leftovers. But this recipe takes MINUTES and is easy to do when you have hardly any time. I've made this soooooo many times. It's so great.

Enjoy!

Stove Top Mac-n-Cheese Recipe .

1/2 pound elbow macaroni
4 tablespoons butter
2 eggs
6 ounces evaporated milk
1/2 teaspoon hot sauce
1 teaspoon kosher salt
Fresh black pepper
3/4 teaspoon dry mustard
10 ounces sharp cheddar, shredded (you can speed up the time even more, buying the already shredded in a bag stuff)

In a large pot of boiling, salted water cook the pasta to al dente and drain. Return to the pot and melt in the butter. Toss to coat.

Whisk together the eggs, milk, hot sauce, salt, pepper, and mustard. Stir into the pasta and add the cheese. Over low heat continue to stir for 3 minutes or until creamy.

Home-Made Macaroni and Cheese

4-6 servings 1 hour 15 min prep
Change to: servings US Metric
2 cups macaroni (uncooked)
1 1/4 cups cheddar cheese (shredded)
2 eggs
2 1/2 cups milk
1/4 teaspoon pepper
1 teaspoon salt
paprika

Cook macaroni until soft.
Use a large roast-pan or bowl which you would cook casseroles in the oven, and put a thin layer of macaroni upon the bottom, and then spread cheese over that layer, and repeat this layering process until the cheese and macaroni are gone (makes about 3-4 layers each).
Mix salt, pepper, eggs and milk together.
Pour into layered macaroni & cheese, until filled at the top (or until it is gone).
Sprinkle w/ paprika on top.
Place in oven, Bake at 350 degrees for about 45 minutes (covered).
Enjoy!

Nanny's Simple Macaroni and Cheese

1 lb elbow macaroni
2 lbs of longhorn colby cheese, sliced to about 1/8 inch slices (I have also used Colby Jack)
milk
salt and pepper

Boil pasta according to package in salted water.
For firmer pasta reduce boiling time by a few minutes.
Drain.
Grease a deep casserole dish (I use a spray).
Place a layer of macaroni, enough to cover the bottom, in the casserole dish.
Add a layer of cheese slices covering the macaroni.
Very lightly season with salt and pepper (I actually skip this and we add salt and pepper to taste on our individual servings).
Repeat these layers until you are out of pasta.
Pour milk over the casserole until the milk almost reaches the top of the casserole dish (It doesn't take much because the dish is already full of pasta and cheese).
Bake covered for about 45 minutes to an hour in a 350 degree oven.
You'll know it is finished cooking when the milk is no longer liquid.
Sometimes I add leftover ham chunks to the layers.
Cook time and servings are approximate!

Macroni, real cheese buy grated or grate your own, add as much cheese as you like. Also velvetta cheese is really good to use if you like velvetta chees. Put cooked macroni in a baking dish add milk with some flour added to it so it can thicken cheese and milk and add some saltine crackers throughout the mixture add salt and pepper and bake at 350 degrees about 45-60 minutes or until it is thick. You may need to add a little more milk with four if it is not thickening.
Good Luck. Tip. . . . the sharper the cheese the better tasting it will be.

First, take & fix elbow macaroni according to pkg. In medium saucepan, take 1pg Kraft 4-cheese blend cheese, 1 cup milk, salt & pepper. Melt over low stirring often, til cheese is melted. Stir in 2 eggs. Pour drained macaroni into baking dish, then pour mixture on top. Sprinkle with 1 pkg of the cheese & bake @ 350 for about 40 - 50 minutes ( if top starts to get too brown, cover loosely with foil. Let stand 10 minutes before serving.......yummy!!
