Stuffed Pork Chops

4 Pork Loin Chops, cut 1-1/2 inch thick
1 (6 ounces) can Orange Juice Concentrate, thawed
1/4 cup Water
2 tablespoons Vinegar
1 tablespoon Vegetable Oil
2 Bay Leaves
1/2 teaspoon Allspice
1/4 teaspoon Onion Powder
1/2 cup Prepared Mincemeat
1/2 cup finely chopped Apples
1/4 cup finely chopped Onion

Cut lengthwise slit in the side of each pork chop, being careful not to cut through the top, bottom, or sides. Arrange chops in shallow baking dish. Combine next 7 ingredients in saucepan. Bring to a boil over high flame, stirring constantly. Reduce flame; simmer 1 minute. Pour mixture over chops and refrigerate 8 hours or overnight, turning once. Combine mincemeat, apples, and onion.

Remove chops from marinade. Reserve marinade. Press 1/4 cup apple mixture into each pork chops and secure edges with toothpicks. Preheat gas grill. Cook chops with cover down on low setting 45 minutes or until done, turning once. Baste occasionally, with reserved marinade.

Makes 4 servings.

Yes you can cook them in the oven. Only problem is they tend to dry out in the oven. Try searing them in a hot pan first to get somewhat of a coating on the chops and finishing them in the oven for about 30 minutes. That should maintain the moisture if you MUST cook them in the oven. As far as what temperature, about 375 to 400 degrees.

I prefer to fix these on the charcoal grill, but you can use the oven if bad weather or no grill available. I like to marinate mine for at least a couple of hours ( if not overnight) then lay each chop in the center of a piece of foil. You can add sliced veggies to this if you'd like or just the chops. Drizzle a little olive oil or some of the marinade over the top of each, then seal foil into individual packets. Cook @ 350 for about 30 - 40 minutes - there will be no pink when they are done........Serve with your favorite sides - for some reason I like to fix wild rice or scalloped potatos, field peas & homemade cornbread.......

sure - maybe about 45 minutes at 350 if they are in a sauce. Serve up with some fried potatoes with onion and some apple or cranberry sauce on the side. Make sure they don't dry out. They're great grilled or smoked too!

Place them 8" away from the grill in the oven for 5-7 minutes each side.

You can put them in the oven in a marinade, as to cooking time- it would depend on the thickness of the meat. Just use a meat thermometer, make sure it gets to 170 degrees.

Dredge in some seasoned flour then fry them in some butter for just a few minutes.

Oven will dry them out and make them tough.
