Spinach Bisque with Dill and Lemon

This creamy-smooth blended soup combines onion, potatoes, and spinach, plus milk, cream & sour cream, with a hint of lemon flavor.

Ingredients:
• 1 medium Vidalia or Spanish onion, finely chopped
• 2 teaspoons (canola) oil
• 1 cup water
• 2 cans (fat-free) chicken (or vegetable) broth
• 1/2 teaspoon finely grated lemon zest
• 3 medium russet potatoes, peeled and diced
• 8 ounces washed fresh baby spinach
• 1 cup whole or 2% milk, or Silk soy milk
• 1 cup half and half or light cream (regular or fat-free as preferred)
• 8 oz container reduced-fat sour cream
• Garnish: finely chopped dill or finely grated lemon zest

It's easiest to cut everything right in half. Example,

1/2 onion, chopped
1 tsp. oil
1/2 cup water
1 can chicken broth
1/4 tsp lemon zest
1 large potato diced
4 oz spinach
1/2 cup milk
1/2 cup half and half
4 oz sour cream

Sounds yummy. You probably won't mind having an extra serving. If you do, you can try to cut the recipe in thirds. Istead of 1/2 cup use 1/3 When you get to the potatoes and spinach, you'll have to guess a bit, but with practice, it gets easier!

Cut in half and use the extra for lunch the next day.
OK here goes:

1/2 onion
1 teaspoon oil
1/2 c water
1 can broth
1/4 teaspoon lemon zest
1-1/2 potatoes
4 oz baby spinach
1/2 cup milk
1/2 cup light cream
4 oz sour cream

There it is!

Usually you can just divide all the quantities, as others have stated. However, this will Not work for every ingredient in every recipe... For that reason, I'd either divide up the ingredients but realize that's a gamble; or make the full quantity and freeze the part you don't want right now.

You just reduce each of the ingredients according... If the recipe is for 6 servings, and you want to make it for 2, then you will need 1/3 of the ingredient quantities, get it?

For the above recipe just divide the above quantities by 2 and make (3) servings for simplicity!

As this is predominantly just a sauce I would make it as is and freeze any thing left over.

In quantity that isn't enough for 6 people unless it is to go with something else.

As a general rule you would divide the ingredients by three but in a case like this it is a question of trial and error.

You divide each ingredient by 3 for 2 servings, and 1 for 6 servings. Though it would be easier to have the 6 servings, and have leftovers.
