Creamy Lemon Cake
INGREDIENTS
1 (18.25 ounce) package lemon cake mix
1 (3 ounce) package lemon flavored gelatin mix
1 cup boiling water
1 (8 ounce) container frozen whipped topping, thawed
1 (3 ounce) package instant lemon pudding mix
1 teaspoon vanilla extract
1 cup milk
DIRECTIONS
Prepare and bake cake mix according to package directions for a 9x13 inch pan. Poke holes in cake while still hot with the round handle of a wooden spoon. Make gelatin with only 1 cup of boiling water. Pour liquid gelatin over cake while hot. Cool cake completely.
Beat together whipped topping, pudding mix, milk and vanilla extract. Pour mixture over cooled cake and refrigerate until ready to serve.

Banana Butter Icing
INGREDIENTS
1/4 cup butter, softened
1/2 cup mashed bananas
1/2 teaspoon lemon juice
1/2 teaspoon vanilla extract
3 1/4 cups confectioners' sugar
DIRECTIONS
Cream together butter, banana, lemon juice and vanilla. Slowly beat in confectioners' sugar, adding more if needed to make a nice fluffy, spreadable icing. Makes about 2 1/3 cups.

Lemon Cake
10 servings 1¼ hours 15 min prep
Change to: servings US Metric
1 cup softened butter
1 1/4 cups sugar
3 eggs
1 tablespoon freshly grated lemons, zest of
2 teaspoons baking powder
1 teaspoon almond extract
1 cup milk
3 cups flour
3/4 cup freshly squeezed lemon juice
1 lb powdered sugar
Preheat the oven to 325 degrees and grease and flour a 9-inch tube pan or Bundt cake pan.
Beat the butter and sugar in a large bowl until light and fluffy.
Beat in the eggs one at a time, mixing well until they are incorporated.
Mix in the lemon zest, baking powder, and almond extract.
Add the milk and flour in alternating doses, starting and ending with the milk, and mixing very well after each addition.
Pour the batter into the prepared pan.
Bake for 1 hour, or until the cake is browned and the sides of the cake have pulled away slightly from the sides of the pan.
While the cake is baking, mix together the lemon juice and powdered sugar until smooth.
Set aside.
Remove the cake from the oven and poke small holes into the top of the cake using a wooden or metal skewer or cake tester.
Pour about 3/4 of the glaze over the top of the cake.
Cool the cake completely in the pan.
Remove the cake from the pan, invert, and place on a serving plate or waxed paper if freezing.
Pour the remaining glaze over the top of the unglazed part of the cake.
Let sit at room temperature until the glaze dries.
Cover and store at room temperature for up to 48 hours, or tightly seal in a freezer proof container for up to 3 months.
Serve at room temperature or chilled.
Thawing Directions: Simply thaw overnight at room temperature.

Lemon Bundt Cake
An easy, lemon-flavored dessert.
Ingredients

- 1/2 cup oil
- 4 eggs
- 1 cup water
Glaze: (Poke holes in cake & spread over warm cake)
- Powdered Sugar
- 1 tablespoon lemon juice, may need additional to reach desired consistency
Frosting:
***FROSTING***
1 small instant banana cream pudding
1 cup milk
1 container (8 oz. size) Cool Whip
Beat together whipped topping & pudding mix. Pour mixture over cooled cake and refrigerate until ready to serve.
Servings: 12
Serving Size: 1 piece
Prep Time: 15 minutes
Cook Time: 1 hour
Directions
Preheat oven to 350 degrees.
Lightly grease and flour bundt pan. In a large bowl, combine cake mix, instant pudding mix, oil, water and eggs. Beat for 2 minutes with an electric mixer. Pour cake mixture into prepared pan and bake for 45-55 minutes. Check for doneness by inserting a knife into cake; if knife is clean when removed, the cake is done.
While cake is baking, prepare glaze. Mix powdered sugar with 1 tablespoon of lemon juice until smooth. Add additional lemon juice until desired consistency is achieved.
Remove cake from oven, and then remove cake from bunt pan. Place on serving plate and poke several holes in cake while it is still warm. Pour glaze into holes (reserving some glaze for top of cake). Cool, cut, and serve.

go to the supermarket and get a lemon cake mix, a vanilla frosting mix and a banana. Follow the directions on The packages and add banana slices to the frosted cake.
