Ah I need help! lol.....im attempting to make a lemon meringue pie and I have the filling done perfectly...but my meringue won't cream up and peak!!! I'm doing it by hand because I don't have a mixer...any ideas??

Specs:
fork, plastic bowl.

I have limited utensils since I live in a dorm...

trying the over stove thing..seems to be getting thicker but not quite there yet :)

it should still work by hand
try doing it over a bowl of hot water

Your utensils must be perfectly clean, any oil or grease will ruin a good meringue. That also means there must be NO yolk in the whites. Avoid moisture as well. When you say you are doing by hand does that mean hand beaters, a whisk or just a spoon?
A spoon is not likely to incorporate enough air into the whites to make them peak. A fork with a lot of effort may work. A whisk is better and an old fashioned egg beater is your best bet short of having an electric mixer.

Not having a mixer is making it harder, but it is possible! One of the most important things to remember is that your egg whites need to be at room temparture for greater volume when whipped!!! (That's a secret many people don't know)

If you don't have a whisk, use a fork and whip it in a warm spot like over the stove if it's still warm!

Give these tricks a try and it should work for you!

I have never made meringue by hand. The only thing I could think of would be use a whisk and beat the daylights out of it!

It needs a lot more beating, I am not sure you can achieve this without using a mixer, can you borrow one?

try adding a couple drops of lemon juice, and maybe a tablespoon of heavy cream.
