I'm highly allergic to lemons, so use lime as a substitute. I forgot I had already purchased some the other day when I bought all those avocados, so I bought even more! I know they'll keep quite a bit, but figured this would be a good time to try new lime recipes. Do you have any unusual or simply especially tasty lime recipes you'd like to recommend? It can be sweet or savory. My flatmates are easy when it comes to food!

When I think limes, I like to start off with drinks.
Gin and Tonic or a Mojito (somthing about the lime-mint and sugar are very nice). For a virgin Mojito, use ginger ale.

Savory entrees:
Use lime as a marinade for beef, chicken or pork to make fajitas or Thai Beef Salad

Beer and Lime Grilled Chicken

INGREDIENTS
4 skinless, boneless chicken breast halves
1 limes, juiced
1 (12 ounce) bottle pale ale style beer
1 teaspoon honey
salt and pepper to taste
3 tablespoons chopped cilantro
DIRECTIONS
Preheat an outdoor grill for medium heat. When grill is ready, brush the grate lightly with oil.
In a shallow bowl, mix together the lime juice, beer, honey, cilantro, salt and pepper. Place chicken into the sauce, cover, and marinate for about 30 minutes.
Remove chicken breasts from marinade, and place on the grill. Grill for about 8 minutes on each side, or until juices run clear, and the internal temperature of the meat has reached 175 degrees F (80 degrees C). Discard leftover marinade.

Making a key lime pie. It's so good. You use 2 packages of cream cheese softened 1 can of sweetened condensed milk fresh lime juice about 2-4 limes half a tsp of vanilla mix ingredients in bowl add sugar to your liking after micxed well pour into ready pie crust put in freezer until firm about 4-6 hours depending on what it's set on

Limonada Brasileira For each person: 1/2 lime (including the rind) 2-3 Tbs sweetened condensed milk 6 oz cold water water Blend all ingredients together; strain. serve over ice.

This is really good.

Strawberry Limeade

1 1/2 cups quartered fresh strawberries
1 cup lime juice, fresh or bottled
4 cups water
1 1/2 cups Splenda sugar substitute
6 small strawberries or lime wedges (optional)

1. Blend strawberries and lime juice in blender or food processor until smooth.
2. Combine strawberry mixture, water and splenda in pitcher.
3. Pour over ice cubes in tall glasses, garnish each with strawberry or lime wedge, if desired.

Mine favourite is very simple...

Throw some corn on the cobs onto the BBQ,
Add a splash of soysauce and a squeeze of fresh lime. . .

BEAUTIFUL..be sure to give it a try at your next BBQ, much healthier than having butter on your corn =)
