Huh, that's one kitchen gadget I don't have. But I've made the pinto bean and feta quesadilla from epicurious.com. It was great, and now that I live in an area where I can get manchego, I swapped the feta for the manchego.

I always made it with chicken cheese and salsa. Oh but you have to try Applebee's Cheeseburger quesadilla. Its great.
