What kind of cut? and any good recipes? I want to make this for dinner tonite but I have never made it from home. I am going to the butcher today after work and wondered what I should ask him to do.

The Original Pat's King of Steaks® Philadelphia Cheese Steak recipe

For all the people who can not get to
South Philadelphia to get the Original.

Here is the recipe for you home chefs.

Serves 4

24oz thin sliced rib eye or eye roll steak
6 table spoons of Soya bean oil
Cheese {we recommend Cheez Whiz®} American or Provolone works fine
4 crusty Italian Rolls
1 large Spanish onion

* Optional
sweet green and red peppers sautéed in oil
Mushrooms sautéed in oil

Assembly

Heat an iron skillet or a non stick pan over medium heat

add 3 tablespoons of oil to the pan and sauté the onions to desired doneness
remove the onions
add the remaining oil and sauté the slices of meat quickly on both sides
melt the cheez Whiz® in a double boiler or in the microwave
place 6oz. of the meat into the rolls
add onions, and pour the Cheez Whiz® over top
garnish with hot or fried sweet peppers, mushrooms, ketchup
Put on the theme song to the first Rocky movie and enjoy!

Philadelphia Cheesesteak Sandwich

RECIPE INGREDIENTS

1 1/2 pounds top sirloin, shaved paper-thin
4 tablespoons peanut oil
1 onion, thinly sliced
1 green bell pepper, seeded and thinly sliced
4 ounces fresh mushrooms, thinly sliced
4 hoagie, po'boy, or Italian-style sandwich rolls, sliced lengthwise
4 ounces provolone cheese, cut into 8 thin slices
1/4 cup sliced pickled jalapeno chiles
8 pickled jalapeno chiles, for garnish 8

Potato chips, for garnish (optional)

RECIPE METHOD

Season the sirloin with salt and pepper, and set aside.

Heat 2 tablespoons of the oil on a pancake-style griddle or in a heavy cast-iron skillet. Add the onion, bell pepper, and mushrooms to the hot pan, season with salt and pepper, and saute over medium-high heat for about 3 minutes, until soft. Keep warm.

Toast the sandwich rolls on the griddle, remove, and place the bottom of each roll on a serving plate. Place the sautéed meat on top the bottom of the roll, top with the sauteed onion mixture, and finish with the cheese slices. Sprinkle the jalapeno slices over the cheese and top with the remaining half of the roll. Cut the sandwich in half and serve with the pickled jalapenos and potato chips, if desired.

For a "real" Philly Cheesesteak you need two things, philly style italian rolls and Frozen chip steaks. These are real thin frozen steak products. Steak-ums is one brand, there are several. Slice up some large onion 1/8" slices, Cut the rolls in half lengthwise leaving about a half inch hinge. Now start to saute the onions in some oil, when they have been stired and fried about two minutes over med. high heat, move them to one side of the pan and add the steak meat broken up to about 1"X3"pieces, fry & turn to lightly brown, as the steak is cooked with tongs place the cooked meat on top of the onions. Add some sliced american cheese or jarred Cheesewhiz. With a spatula place all neatly into the roll. The roll should now be layered , meat, onions,cheese or meat cheese ,onion whatever fits your taste.

flank or skirt steak works really well. freeze the steak for about 20-30 mintutes until it is semi hard. this will makeit easy for u to slice. slice into thin slices, season with salt and pepper. saute until brown. add cheddar, jack or provolone and melt. put on a toasted roll

PHILLY CHEESE STEAK

4 oz. flank steak slices
1 French roll
1/2 oz. green pepper, juilenne
1 oz. sauteed mushrooms, sliced
1 oz. sauteed onions
2 slices Mozzarella cheese
5 oz. cottage fries
1 endive
1 Kosher pickle spear

May substitute for cole slaw.
Grill slices of flank steak in butter. Grill green peppers 1 minute. Split French roll on 1 side. Butter and grill until warm. Take peppers, onions, mushrooms and put on top of flank steak. Top with Mozzarella cheese. Cover for 1/2 minute with lid.

Put in French roll and cut at an angle. Put on plate. Deep fry cottage fries and put on plate. Put on garnish.





PHILLY STEAK SANDWICH

4 Italian rolls
8 slices of American cheese
8 slices of minute steaks
1 jar of mild salsa
1 onion, sliced
1 green pepper, sliced

In pan, cook onion, green pepper and salsa until thick. Cook steaks and put on half of rolls. Top with the cheese and salsa mixture. Put top half of roll into microwave 2 seconds. Put roll on top of sandwich and enjoy.

top round, not too costly and good. get a large chunk from the butcher, par-freeze, slice thinly and go to town
