14 people eating. I need amounts for the white sauce and how much tuna, from cans, drain tuna or not drain tuna. And directions on how to cook it. New cook.

INGREDIENTS:~~~~~~~~Creamed Tuna on Biscuits
1/4 cup butter
1/4 cup flour
1/2 teaspoon salt
1/4 teaspoon pepper
2 cups milk
1 can (about 7 ounces) tuna, drained
1/4 to 1/2 cup frozen peas, cooked
PREPARATION:
Melt butter over medium-low heat; blend in flour, salt, and pepper. Stir and cook for about 2 minutes, or until smooth and bubbly. Gradually stir in milk while stirring constantly. Continue cooking, stirring constantly, until mixture thickens and begins to bubble.
Add drained tuna and cooked peas.

Continue heating and stirring until hot. Serve creamed tuna over toast, biscuits, or rice.
Creamed Tuna recipe makes approximately 3 cups. You will have to double and then double again this recipe to fed 14 people or maybe times everything by 5 to have enough for everyone. I hope I helped you out. Good Luck!!!

This recipe if for 4 servings, so just increase the ingredients 4 times the amounts in the recipe...ENJOY!!!

Creamed Tuna on Toast

4 servings 30 min 10 min prep

1/4 cup margarine
1/4 cup flour
2 cups milk
1 can drained tuna fish
1 cup frozen peas (or to taste)
salt and pepper
bread (for toasting)

Thaw frozen peas in a collendar.
Melt the margarine in a saucepan.
Add the flour and blend.
Add the milk, stirring constantly to prevent clumping and stir until creamy.
Add the tuna, peas, salt and pepper and warm through.
As the tuna is warming, toast bread. (OR BISCUITS)
After toasted, cut in triangles and spoon tuna mixture over the toast.

----------ACTUALLY, THIS IS THE RECIPE THAT I USUALLY USE,BUT I ADD A LITTLE CAYENNE PEPPER TO TASTE, FOR A LITTLE "KICK".

Tuna Recipe with Peas and Hard-Cooked Eggs

INGREDIENTS:
3 tablespoons butter
3 tablespoons all-purpose flour
1/4 teaspoon salt
1 1/4 cups milk
1 1/2 to 2 cups frozen peas (10 ounce package), cooked
1 can (7 ounces) tuna, drained and flaked
buttered toast
2 hard-cooked eggs, sliced

PREPARATION:
In a medium saucepan over medium low heat, melt butter; blend in flour and salt. Remove from heat; gradually add milk. Return to heat and cook, stirring constantly, until mixture thickens. Reduce heat and cook an additional 2 minutes, stirring frequently.

Add drained cooked peas and tuna to the sauce; heat to serving temperature. To serve, spoon tuna over toast and garnish with hard cooked egg slices.
Creamed tuna serves 4

*(AGAIN, MUTIPLY THE INGREDIENTS BY 4 TO ARRIVE AT A DISH THAT WILL SERVE 16 PEOPLE.)

Cheddar Creamed Eggs on Toast

4 slices bacon
6 large hard boiled eggs, peeled and sliced
1 medium onion, chopped
1 1/2 cups sharp cheddar cheese
3 tablespoons all-purpose flour
1 1/2 cups milk
4 slices toast

Cook bacon until crisp; drain on paper towels; crumble and set aside.
Meanwhile, prepare hard boiled eggs. (This can be done the night before and refrigerated.)
Drain all but 1 to 2 tablespoons drippings from skillet. Sauté onion in remaining drippings.
Combine cheese with the flour and add to onion in skillet. Add milk and stir over medium heat until mixture thickens.
Fold in eggs and crumbled bacon. Serve over toast.
Makes 4 servings.
