I have a large cod fillet. I have no clue what to do with it. I asked my wife and she just laughed warning me that she is a Religious cook."everthing is a burned offering or a sacrifice" her words not mine. I like to use mongolian fire oil but kids hate it hot.so hot is out and the only other way I know is basic bake. I wanted something with a little more flavor.

mexican baked fish:

INGREDIENTS
1 1/2 pounds cod
1 cup salsa
1 cup shredded sharp Cheddar cheese
1/2 cup coarsely crushed corn chips
1 avocado - peeled, pitted and sliced
1/4 cup sour cream


DIRECTIONS
Preheat oven to 400 degrees F (200 degrees C). Lightly grease one 8x12 inch baking dish.
Rinse fish fillets under cold water, and pat dry with paper towels. Lay fillets side by side in the prepared baking dish. Pour the salsa over the top, and sprinkle evenly with the shredded cheese. Top with the crushed corn chips.
Bake, uncovered, in the preheated oven for 15 minutes, or until fish is opaque and flakes with a fork. Serve topped with sour cream.

or just marinate the fish fillets with salt and pepper for 2 to 3 hours fry or bake and serve with mustard sauce:

Mustard suace
Ingredients:
garlic clove, crushed
1 spring onion, chopped
1 tbsp Dijon mustard
1 tbsp lemon juice
1/3 cup sour cream
1/3 cup yoghurt, preferably low fat
1 tbsp olive oil
1/4 tsp sugar
Salt

Directions
In a small plastic bowl whisk mustard, garlic, lemon juice and cream
until smooth. Add yoghurt, onion and sugar and continue to whisk until
well
combined.

In a large skillet heat oil and pan-fry fish until tender and
golden.
Season with salt.

Pour some of sauce on top of fish and
serve you can hav potatoe wedges with it....i mostly make this it is delicious!

Cod with Italian Crumb Topping
INGREDIENTS
1/4 cup fine dry bread crumbs
2 tablespoons grated Parmesan cheese
1 tablespoon cornmeal
1 teaspoon olive oil
1/2 teaspoon Italian seasoning
1/8 teaspoon garlic powder
1/8 teaspoon ground black pepper
4 (3 ounce) fillets cod fillets
1 egg white, lightly beaten
DIRECTIONS
Preheat oven to 450 degrees F (230 degrees C).
In a small shallow bowl, stir together the bread crumbs, cheese, cornmeal, oil, italian seasoning, garlic powder and pepper; set aside.
Coat the rack of a broiling pan with cooking spray. Place the cod on the rack, folding under any thin edges of the filets. Brush with the egg white, then spoon the crumb mixture evenly on top.
Bake in a preheated oven for 10 to 12 minutes or until the fish flakes easily when tested with a fork and is opaque all the way through.



Lemon Pepper Cod
INGREDIENTS
3 tablespoons vegetable oil
1 1/2 pounds cod fillets
1 lemon, juiced
ground black pepper to taste
DIRECTIONS
In a large skillet, heat oil over medium high heat until hot. Add fillets and squeeze 1/2 of the lemon's juice over the tops. Sprinkle with pepper to taste. Cook for 4 minutes and turn. Squeeze with the remaining lemon's juice and sprinkle with pepper to taste. Continue to cook until fillets flake easily with a fork.

Busy Day Baked Parmesean Fish
1 cup (8oz) sour cream
2 tblsp onion soup mix
1 1/2 cups seasoned bread crumbs
2 1/2 lbs fresh or frozen fish fillets, thawed
1/4 cup butter, melted
1/3 cup shredded Parmesan cheese

In a shallow bowl, combine sour cream and soup mix. Place bread crumbs in another shallow bowl. Cut fish into serving sisze peices; coat withthe sour cream mixture, then rollin the crumbs.

Place in two greased 13 in x 9 in x 2 in baking dishes. Drizzle with butter. Bake, uncovered, at 425 for 12 minutes. Sprinkle with Parmesan cheese; bake 2-6 minutes longer or until fish flakes easily with a fork.

Makes 6-8 servings.

Easy. Either squeese the juice of a lemon on it or if you have lemon juice sprinkle some of that on it and then a little lemon pepper. Tha's what I do with mine.
