Ok mince meat of course...some like cut pieces that are chunkier. Use which you prefair.
My secret ingredient is about half the weight of the beef in bacon. cut is very fine and cookk with the beef. Adds a lovely flavous and dimension to the overall dish.
Chop an onion finely and fry that and the meat together. Add some flour and fry till cooked. Add chilli power to your taste.If you want it really hot them a table sppon or more, if its to be for kids too make it less.Add your tomatoes, either tinned tomatoes and or puree. I like the puree version myself...
And tinned red kidney beans. Drain the liquid off them before adding. cook gently.
I think dark chocolate adds an authentic flavour and colour too. the Mexicans have traditionally used chocolate in their cookery for hundreds of years! Dark is best as you don't want the sugar.

When serving my chilli we as a family love it with tortilla chips, chopped fresh tomatoes, cucumber, grated cheese, sour cram, guacamole and salsa! A favourite in our family!

strangely enough, a secret ingredient that brings the taste of a chilli from good to superb is,,,,, Dark Chocolate. Just grate up some dark chocolate and sprinkle it on top and then mix it well. Somehow, this brings out all the flavours and the chilli is tooo good to resist.

Always add a cup of strong coffee, a dark beer (if you really like beer taste use something like bud lite...the lighter beers cut through where the darker beer adds boldness) 1 to 2 tablespoons of cocoa,
if you can get venison add it 3/4 venison to 1/4 beef...the flavor is great,
from there just take a normal recipe and add whatever contents you like best

Buy a bag of Pinto Beans. The recipe is on the back of the bag. Soak your beans in salt water the night before cooking them, rinse the beans off before cooking them. Follow the recipe on the bag & enjoy!

When browning the beef, add your chili powder, cumin, salt and pepper. If you don't the meat will be unflavored in the end result. I add canned white cannellini, black beans and cilantro to mine, not for a prettier dish, just because I don't care for red kidney beans. I will have to try the beer tip that appears here, my husband will think he died and went to heaven, his two favorite things in the world! :o)

Cumin - Grind it yourself with a mortar & pestle -Whole cumin seed is cheaper and it tastes better freshly ground

Koshar salt- cook with Kosher - table salt is for the table
