Unless you're looking for tacky tourist traps avoid Atlantic City, Seaside Heights and Wildwood. Awful, horrible places.
Cape May is cute, if you're looking to visit the shore. There are a ton of cute B&Bs there and the shopping is pretty good, too.
I prefer to stick to northern New Jersey. If you are into any sort of historical things I'd suggest visiting Morristown. There are numerous Revolutionary War related areas of interest. (Jockey Hollow, Washinton's Headquarters Museum)
If you like history and architecture, visit Acorn Hall. It's a mansion run by the Morris County Historical Society. It's beautifully decorated.
Also, if you research some of the surrounding towns (Mendham, Madison, Far Hills, Chatham) you'll discover that there is a special event/ fair/festival/ parade happening practically every weekend from now until Christmas.

Belmar, Atlantic City, and Cape May, stay along the coast. The Jersey coast is where tourist visit when they go to New Jersey after being exhausted from touring NYC.

depends on where you want to go in the state, but the fact that you don't want to go to either nyc or philadelphia ,i'm going to guess you want something else.
i suggest the shore. pretty soon the weather's going to be great (between the rain and the warmer heat of april and summer, respectively).
i'm going to suggest specifically, Margate, nj. nice and clean. it's on the same island as atlantic city, but 2 towns over so you have a nice buffer between your piece of seaside utopia and the riffraff of atlantic city. should you feel the need to go to a nightclub or gamble, it's close enough.
i don't know about hotels, etc. but if you can find someone who owns a beach house or whose timeshare you can share, go for it.

for hiking my favorite is the palisades interstate park it runs along the hudson from ft lee north through ny state. some rough hikes and watch out for the poisin ivy.
