i've been obsessed with the dressing so i bought some crumbled blue cheese, and was just wondering what else would be good with it besides salad?

Savory Grilled Steak With Bleu Cheese Garlic Butter Recipe:
Our local grocery store sometimes will have chefs prepare sample dishes & this was one of them. I find that a little butter goes a long way, so I've been able to reduce the amount by half & there is still plenty of savory flavor to top your steak with. For those watching carb content it is 6 net carbs. You will probably have some left over Bleu Cheese Garlic Butter & once you taste it, you'll think of many things beside steak you'll want to add it too.

Garlic Bleu Cheese Butter
2 garlic cloves, chopped
1/4 teaspoon onion powder or garlic powder
1/4 teaspoon McCormick's Montreal Brand steak seasoning or other seasoning salt
1/4 cup butter
1/3 cup crumbled blue cheese
1/4 teaspoon dried thyme
Steak
4 petite filet mignon steaks
3-4 cloves garlic (chopped)
1/4 teaspoon seasoning salt
1/4 black pepper
1/4 soy sauce
cooking spray

Bleu Cheese Garlic butter: Add butter,garlic, thyme, and seasoning to food processor or blender and puree.
Add Bleu Cheese and puree.
Set aside and refrigerate.
Steak: Mix seasoned salt, garlic,pepper, and soy sauce to create marinade.
Place steaks and marinade in a large dish and marinate for 10 minutes, turning once.
Discard marinade.
Spray grill with cooking spray and grill steaks for@ 6 minutes on each side for medium.
When fresh off the grill,serve each steak with a TBL.
of Bleu Cheese Garlic Butter on top.

You could fry some large, portabello mushrooms on the caps from which the stalks have been removed and then transfer to a grill pan or baking tray and add a little onion to the upturned mushroom with some garlic and a drizzle of olive oil and then sit some of the cheese on top and grill until cheese is bubbling.

Another would be to bring some veg stock to the boil, add some broccolli and onions etc and cook them down. Cool a bit and then whizz it in a food processor. Replace into your now clean pan and add the blue cheese and gently reheat it and allow the cheese to melt.

Cheese sauces for pasta are all nice, blue cheese would be no exeption.

Ok. Get some ground beef, mix in an egg, mix in some spices and red wine, add a little worchestershire sauce. Make a very thin hamburger patty. Pile the Bleu Cheese in the center (I also add pieces of bacon or carmelized onions or roasted garlic) Make another thin patty. Cover the cheese with the other patty. Grill it up. You got the best burger you ever tasted. Let the burger rest a bit after taking it off the grill the center will be liquid magma hot.

I made broccoli and blue cheese soup last night - just gently fry an onion, add a head of broccoli cut into florets and a clove of garlic. Pour over a pint of stock and cook for 15-20 mins. Remove from heat, add some blue cheese (about 1-2 desertspoons) and blend when cool. Add some milk or water to thin it down to desired consistency if required - lovely !

Because blue cheese is so pungent, a little goes a long long way. I use it sparingly in several things I make:

1. Spinach salad with candied walnuts, crumbled blue cheese (or feta or goat cheese), mandarin oranges, and a French dressing.

2. Stuffed chicken breasts with artichokes and blue cheese (or feta, gorgonzola, or goat): Create a cavity in the thickest part of the breast and season liberally with salt and pepper. Drain one can of artichoke hearts (save the liquid) and chop. Mix 1 cup of the hearts with crumbled blue cheese and 1 cup fresh bread crumbs. Stuff each chicken breast with 1 T or more of the stuffing and place in baking dish. Bake at 350 degrees for 1 hour or until juices run clear. In pan, take remaining hearts and juice and heat. Add pepper and thyme to the mix and simmer to reduce. Mix 1 T corn starch with 1/2 cup white wine and add to the mixture. Simmer until thickened. Pour over chicken and serve.

3. Cheese ball with blue cheese: 3 packages cream cheese, 4 oz. blue cheese, 1 tsp tabasco sauce, 1 T chopped parseley, 1/2 cup chopped candied walnuts. Combine cream cheese with blue cheese, tobasco sauce and parsley. Form into a ball and roll in candied walnuts. Serve with multigrain crackers.

4. Add to your macaroni and cheese along with cream cheese for a little zing!

Try making a little fruit dish. My girlfriend used to do this. She would get some blue cheese, Some crackers, and grapes, tomatoes anything like that. And serve them on a little dish. You put the cheese on the cracker and add any fruit you want. It was really good, a good party or get togethor dish.

Bleu cheese crumbled onto a steak and browned just a tad is a wonderful thing..

I also sometimes include it when making Potatoes AuGratin,
but beware overdoing it as it's pungent stuff.
