Vanilla will taste like, um, vanilla....which will enhance the flavor of your shortbreads! Only use 1 tsp, though, or it can taste bitter.

Shortbread cookies have a very delicate flavor, adding vanilla over powers the cookies to me. To make them taste wonderful start with very fresh butter. For these cookies i use organic butter, it seems to have a better taste. Whatever kind of butter you use, taste it before you use it. If you taste any flavors, get new butter. I make these often and never use vanilla, and everyone asks for my recipe.

If you add vanilla, it wouldn't be shortbread. You'd be making vanilla butter cookies. There is nothing like a true shortbread cookie. :o)
