I just buy a turkey. I put it in a basket but it keep flying everywhere.
and peck my kitchen utensiles.

I try to grab it's neck and cut it straight, but the blood spread everywhere, and my whole kitchen is dirty.

I prefer to purchase my turkeys already dead and dressed so that all I have to do is cook the darn things! But, you have a live one, so, I'm wondering how come you didn't take it outside and cut its head off? Blood? Well, try a little clorox mixed with water to clean up and disinfect. Then put your turkey in boiling water to ease getting the feathers out. YOu'll also need to cut off the feet, leaving a nice drumstick and thigh, and then all that plucking! Whew! Good luck! :)

Well i guess its dead now, if not hang it upside down till the blood stops. Then put it in boiling water to make the feathers easier to come off.

Take it outside, hold it close to the head in one hand and a little further down for the other hand.
Twist sharply, job done.
