Depends on what you want to do with the car. I wouldn't recommend taking your car to Stillen. You'll pay a ton and probably still have problems. I have yet to meet someone who did any major work with Stillen and was happy about it.
Join www.twinturbo.net and you'll find any info on the car you could ever want. As for a good place to take your car in Southern California, you really can't beat Specialty Z. Arguably the most knowledgable people around when it comes to the Z32. Their pricing is usually much lower than anywhere else as well. Their customer service is unmatched as well. They did my engine build and were still calling me six months later to make sure everything was going well with the car. Be warned that there can be a bit of a wait to get in though.
Search for them on google or twinturbo.net. You wont be disappointed.

Stillen is located in Costa Mesa. There are plenty of tuners in Southern California. Never knowing what your car has been thru you should start with a compression test, then leak down test. If the engine makes 140 or more pounds of compression pressure. Then spend money on new ECM'S and other parts. Get ready for some serious money these cars are complex. Twin turbo compression is 130 to 150 normally asperated 300ZX is 143 to 170 no two cyl's should vary more than 13 pounds. Common leak down readings in the 5% to 10%, I am working on a 90 300ZX TT that has 2% to 3% all six cyl's
