I'm a big curry fan, and have many recipes.. but this is amongst my favorite (one I came up with personally). I hope you enjoy it!
CURRIED CHICKEN FLORENTINE

2 1/2 c water
3 T chicken boullion (or 3 cubes)
2 T curry
1/2 t poultry seasoning
1/2 t marjoram
1/2 t thyme
1 c uncooked brown rice
2T olive oil
2 boneless skinless chicken breast halves
powdered garlic seasoning
1/2 medium onion, chopped
1 c cold water
2T cornstarch
1 (10 oz) pkg frozen chopped spinach (thawed/drained)
1 c cottage cheese
1/2 c parmesan or asiago cheese

bring first 6 ingredients to a boil in a medium sauce pan,
add uncooked brown rice, cover, simmer on low 50 minutes.
meanwhile.. place chicken in heated skillet with the olive
oil, sprinkled with garlic seasoning. cook until chicken
is no longer pink and juices run clear. cool & cube.
using chicken drippings, sautee chopped onions until tender.
mix 1c cold water with 2T cornstarch, set aside.
pre-heat oven to 350
in a large bowl, mix rice, cornstarch/water, chicken cubes,
cottage cheese, spinach, and onion. transfer mixture into
a casserole dish coated with non-stick spray. top with the
cheese, cover & bake for 45 min. remove lid, bake another
15 minutes until surface is lightly browned.

I use a croc pot, but you can use a heat safe bowl in an oven or a pot on a stove, only the cooking time varies.
Make chicken gravy with 2 packages of dry chicken gravy mix and two cups of water and a teaspoon of flour
add two tablespoons of curry powder and stir in well and cook till it has thickened.
pour onto chicken peices and simmer until the chicken is cooked, flavor will go into meat
Chicken peices should have skin and fat removed before cooking
When finished if your sauce needs more flavor, add another tablespoon of curry powder and simmer for a few more minutes.

Here's a recipe for curry chicken my dad gave me (modified from a recipe for curry beef) that is pretty easy to make and REALLY flavorful. It's not quite like indian curry per say, it's more an American-style recipe I think, but it's good. Usually I make it with beef -- round steak cut up -- and simmer it for an hour instead of 10 minutes.
1 T flour
1 1/8 t salt
1/8 t pepper
1 pound meat cut in pieces
1/4 c oil or fat
2 c sliced onions
1/2 clove garlic, minced (or just use powder)
1 t curry powder
1 beef/chicken bouillion mixed with 1 cup boiling water
1/2 c tomato juice

Combine flour, salt, pepper, etc. Roll meat in it and brown in skillet with enough oil to cover.
Add rest of oil, onions, garlic. Saute till golden.
Sprinkle with curry powder (I'm always adding more curry powder...as much as you want).
Add bouillion plus water and simmer for 10 minutes.
Add tomato juice and cook 15-30 min more.
Serve on rice. Serve with a variety of condiments on the side: bananas, tomatoes, onions, peppers, cucumbers, cheese, coconut, pickle relish, fruit, chips, peanuts, raisins, sweet and sour pickles........whatever! My favorites are pickle relish and raisins with it.
It's good for company that you want to stay at the table with for a longer time. Kinda like fondue. This recipe serves 4 or 5 I think.

Chicken curry
This is a very well known Indian recipe. The special taste of curry and hot chili makes it a loved recipe by Egyptians.
Cuisine International
Main ingredients Chicken, Curry, Green Pepper, Carrots
Time of preparation 15 Minutes
Time of cooking 40 Minutes
Serving 4
Ingredients 1 Chicken
1 Green Peppers , medium size, diced
1 Onion , large size, finely chopped or grated
1 tbsp Yoghurt
1/2 tsp Ginger , grated
1 Carrot , medium size, thickly sliced
1 1/2 tbsp Curry ,powder
1 tbsp Flour
1/4 tsp Chili Powder
1 Chicken Stock Cubes
1/2 tsp Garam Masala
salt
3 tbsp Corn Oil
Directions
Wash chicken well. Boil until tender. Strain and reserve one cup of chicken broth. Debone chicken, remove skin and cut into large sized pieces.
In a saucepan heat and stir oil and onions until yellow. Add green pepper and carrot and stir for about 1 minute.
Add curry powder, ginger, chili powder, garam masala and salt and stir until smell rises.
Add flour and stir well. Stir in yoghurt. Leave for about 30 seconds. Add chicken broth, stock cube and 1 cup water, stirring constantly, until mixture is smooth.
Bring to boil, reduce heat and simmer until sauce is reduced to half. Add chicken and continue cooking for another 5 minutes.
Taste to adjust seasoning and add more curry if needed. Serve in a bowl with plain rice.

Ask for this brand of curry paste, HAI chicken curry. Buy the one in a rectangle container (about $1.85). Available at all supermarkets. Though price many differ. Okay now the cooking part. You need 2 stalks of lemon grass, 15 to 20 small onions and some curry leaves. Flatten the lemon grass and pound the onions. Heat oil in a wok, add the lemon grass, onions and curry leaves. Fry till fragrant. Now add in the curry paste. Continue frying till fragrant at low fire. Then add in the chicken. You can add coconut milk of carnation milk to it. Lastly add salt to taste. By the way the paste is for 1 chicken. You may want to add some potatoes. Happy cooking.

This is the recipe that I have that I use most! It is simple..
We used to live in africa and there they add loads of side dishes, this curry works both on its own or with loads of chopped fruit and veg too...I also add hard boiled eggs to it with the chicken. (Its usually chicken I make as well although the recipe says iot works with opther meats too)
Curry
1 lb / 500g cold lamb, beef or chicken Sultanas
¾ pt / 450ml stock or water 1 apple
1 dessertspoon chutney 1 onion, chopped
1 dessertspoon curry powder 1 oz / 30g flour
Oil or dripping
Method:
Fry onion in oil or fat. Add flour and curry powder. Add stock gradually, stirring all the time. Add seasoning and cook for 30 minutes. Put in meat, sultanas, grated or chopped apple. Simmer for 10 minutes. Add chutney. Serve with rice. You can also add cubed potato with the meat, or a tin of pineapple or 1-2 oz / 30-60g creamed coconut.
