Personally, I love the Tillamook Extra Sharp cheddar. I just shredded two pounds of it today. I love the stuff.

How about a super-aged cheddar? I had a Grafton Cheese Company 6-year-old cheddar that was honestly one of the best things I have ever tasted:

U can find cheese and stuff at scotland yard port royal off pirates of da carribean and in da Court ridge valley cheese bougue in Malaga, Spain.
