mozzarella is the "right" cheese to use, but use whatever you want.

First choice Mozzarella but I like to mix some other flavours on my pizza too, such as

Gruyere
Emmental
Cheddar
Parmigiano
gorogonzola ( I use this with fresh herbs but no tomato sauces)

When I'm lazy, I would buy a pack of 6 Italian cheese (mixed in a zippar bags) and sprinkle it all over my pizza, quick and no need to think + the outcome is good too!

If you want it to stretch then use Mozzarella cheese. You can buy them pre grated depending on where you live, but Im sure most supermarkets have them pre grated,

I make my own sauce. Here's the recipe if you like.

1tsp olive oil
2 onions chopped in small cubes.
2tbl spoon tomato paste
1tbl spoon, dried oregano.
pinch of salt

Method.

Fry your onion in the oil till golden, then add your tomato paste stir over the heat add some water to make it smooth and a little watery not to much though. Add your oregano and salt, cook for a few minutes, allow to cool then spread it over your pizza base, then add your toppings. It tastes really good.

I believe in using a combination of cheeses that include American, jack, cheddar, provolone, mozarella and asiago. I always sprinkle on parmesan and have also used goat cheeses (sparingly).

I use whatever I have on hand. I usually have cheddar, and mozzarella, but sometimes I only have a Mexican blend. It all works and adds new flavors to it. :)

i use mozzarella and cheddar i like the sharp cheddar but you can use any of it
