Anyone know any good holiday places for adventure sports in lower QLD or upper NSW? e.g. water skiing, white water rafting jet boats, wind surfing, water skiing, quad biking horse riding etc.

All stuff like that is available from the Gold Coast, one of the major tourist traps in Australia.
If a high rise holiday is not your thing you will find lots of adventure activities in Byron Bay and Coffs Harbour in NSW.
