Yes my dad used to say fit as a fiddle when asked how he was.

I have heard strong as an ox and healthy as a horse. You can also be the picture of health.

The healthy as an OX came from the old farm days and covered wagon days, Oxen were used to pull wagons and plows and seemed to rarely get sick.

When I am asked How are you, I say,

If I was any better I would have to be twins.

I've heard it a few times. Oxes are strong, enduring animals, so I guess that's why it's used. That's strange---I can't really think of any other phrases! I know there's a ton. Someone else will tell you. Sorry :(
