The cooling time depends entirely on how hot the food was.

The reason for letting stuff cool is to stop raising the temperature of the refrigerator (which would promote bacteria growth, etc.) Food can be slightly warm before putting into the fridge, but never radiantly hot.

Putting the slightly cooled food into a plastic container before chilling can lower the risk of raising the fridge temperature. You may get some condensation in your container, which may re-moisten the food and may not be nice, but it shouldn't be particularly unhealthy.

Not cooling potentially hazardous foods correctly is one of the leading causes of food borne illnesses. Watch out for the "danger zone"!
The "danger zone" is the range between 41°F and 140°F where bacteria can grow most quickly. Foods must be cooled down out of the temperature "danger zone" within 4 hours.
Foods like rice, beans and stew may be cooled in shallow pans, uncovered, until they are 41° F or below.
Large pieces of meat or poultry must be cut into smaller pieces (4 inches or less), placed in shallow pans, uncovered until they reach 41°F or below.
After any food has reached 41°F, it can be covered.

If you put really hot food in your fridge, it will bring up the temp of your fridge, which will affect the chilling of other foods already in your fridge.

At room temp, let the food cool down to 63 degrees centigrade, then put in the fridge.

Ensure it is wrapped/covered appropriately.

I was brought up to say true but i don't believe it, i refrigerate leftovers immediately.

TRUE!!!!!!!!!! Food should be room temp than put away. I know this is a fact as my son just completed a food course for work! Lol I use to put it right away till he told me I was going to kill everyone!
