Why does the mass of a plant (or plant seed) decrease after being dehydrated?

please help! i need it for class tomorrow! (april 19th) i know it has something to do with cells breaking down and the plant using up all of its food

I would think it's the dehydration itself that is measured as a loss of mass. The loss of water is important in cells because cells are largely made of water.
