Peanut Butter Cookies, Classic
1/2 cup unsalted butter
1/2 cup butter flavored shortening
1 cup peanut butter ( crunchy or smooth, your choice)
1 cup white sugar
1 cup packed brown sugar
2 eggs
2 1/2 cups all-purpose flour
1 tsp baking powder
1/2 tsp salt
1 1/2 tsp baking soda
Cream together butter, peanut butter and sugars. Beat in eggs.
In a separate bowl, sift together flour, baking powder, baking soda, and salt. Stir into batter. Put batter in refrigerator for 1 hour.
Roll into 1 inch balls and put on baking sheets. Flatten each ball with a fork, making a criss-cross pattern. Bake in a preheated 375 degrees F oven for about 10 minutes or until cookies begin to brown. Do not over-bake.
Servings: 24
Yield: 4 dozen

Peanut Butter Cookies (Flourless)

 1 c. Creamy Peanut Butter
 1 c. White Sugar
 1 Egg

Preheat oven to 350 F. Mix ingredients together. Roll into 2-inch balls. Place onto cookies sheet and flatten with fork. Bake for 15 minutes exactly. Cookies should be light brown and slightly shinny when done.

Servings: 2 dozen 2-inch cookies

Peanut Butter Cookies

1 1/4 cups flour, sift or stir before measuring
1/2 teaspoon salt
1 teaspoon baking powder
1/2 cup shortening
1/2 cup peanut butter
1/2 cup granulated sugar
1/2 cup light brown sugar, packed
1/2 teaspoon vanilla
1 egg
PREPARATION:
Sift together flour, salt, and baking powder; set aside. Cream shortening, peanut butter, and sugars; beat in vanilla and egg. Stir in flour mixture, blending well. Shape mixture into 3/4-inch balls; place on greased baking sheets. Flatten each cookie with the tines of a fork; dip fork in flour periodically to keep it from sticking to the peanut butter cookie dough.
Bake peanut butter cookies at 375° for about 10 to 12 minutes.

1-1/4 cups flour
1/2 teaspoon soda
Thoroughly cream butter, peanut butter, sugars, egg and vanilla. Combine separately flour and soda; blend into creamed mixture. Drop from teaspoon onto ungreased cookie sheet. Crisscross with fork. Bake at 375° Fahrenheit for 10 to 12 minutes. Do not overbake; tops should be just starting to brown. Makes 2-1/2 dozen.

Easy Peanut Butter Cookies:

20 min 10 min prep
24-30 cookies

1 cup sugar
1 cup peanut butter, any style
1 egg
2 teaspoons vanilla extract

1. Preheat oven to 350 degrees.
2. Cream together sugar, peanut butter and egg. (Mixture will start to form a ball).
3. Add vanilla.
4. Using a cookie scoop or 2 teaspoons, spoon out mounds of cookie dough on an ungreased cookie sheets.
5. Using a fork (or cookie stamp!)press cookie in a criss-cross pattern.
6. Bake for about 13 minutes.
7. Let cool on cookie sheet for 2-3 minutes, then cool completely on rack.

1 cup sugar (you can cut this down to 3/4 cup, if you prefer)
1 large egg
1 cup peanut butter (crunchy or smooth)
Combine sugar and egg in mixing bowl, stirring till smooth. Add peanut butter and mix in thoroughly.
Roll into walnut-sized balls.
Place the balls on ungreased cookie sheets at least 2" apart.
Flatten with the tines of a fork.
Turn 90 degrees and use fork again to create cross hatches.
Bake 10 minutes at 375F (or till done). Let cool in pan for 1 minute before removing to cooling rack.

I have to make mine flour free but they taste very good!

PEANUT BUTTER COOKIES

INGREDIENTS

1 cup semisweet chocolate chips
DIRECTIONS
Preheat the oven to 375 degrees F (190 degrees C).
In a large bowl, cream together the butter, brown sugar, white sugar and peanut butter until smooth. Beat in the egg and vanilla. Combine the flour, wheat flour, baking soda and salt; stir into the peanut butter mixture. Finally, mix in the oats and chocolate chips. Drop by rounded spoonfuls onto ungreased cookie sheets.
Bake for 8 minutes in the preheated oven, or until edges are golden. Remove from cookie sheets to cool on wire racks.

1 (12-ounce) package semi sweet chocolate morsels
1/2 cup coarsely chopped peanut
Preheat oven 375F
1. combine flour, baking soda, cinnamon and salt in a mixing bowl. Beat butter, brown sugar, granulated sugar and peanut butter in a large bowl until creamy. Add in egg and vanilla. Gradually add in flour mixture, stir in morsels and peanut. Drop dough by round tablespoon onto ungreased baking sheet, press down slightly to flatten into 2-inch circle. Bake for 7 - 10 minutes or until edges are set but centers are still soft.

One word of caution, peanut butter cookies burn really quickly, so you have to keep an eye on them and pull them out as soon as they are baked.
