If you go with the ultra mag, you are going to do alot of damage to the meat on anything you hit with it. I use a 308, my friend in Montana is a hunting guide and he swears by a 6mm Remington, says he laughs when people from out east come with huge belted mags to hunt elk. Goes on to say that most of these hunters have a hard time with accuracy. I cant imagine why.... its spelled RECOIL!

Of the two you stated the 7mm stw would o fine. If the gun is custom made you should be able to get 1 inch at a hundred yard group or better. My factory 308 will get 1 3/8 inch groups off a bench at 200 yards.

I contacted Remington a few years ago about barrel life in the 300 RUM. I was told that they expect barrel life to be half of the(I believe) 5000 rounds that they expect out of a non magnum cartridge. If your rifle is light enough to pack in the mountains all day then recoil will be very substantial. You may want to consider a muzzle brake.

That 338 is over kill for elk.
If you must have a magnum go with the 300 for it has the best bullet selection available.
Me personally in Wyoming we use the 30-06 and it kill them just as dead as any magnum.
I save the magnums for Big Dangerous game and elk don’t qualified for that.

Hard chroming the inside of the barrel should increase the barrel life of your rifle. Most people don't shoot the big magnums enough to burn out the barrel, but since you're having a rifle custom built, looking into this.
