LEMON GARLIC CHICKEN
1 pound skinless, boneless chicken breasts, cut into 4 portions
1/4 cup lemon juice
1 tablespoon minced garlic
1/4 cup cornflake crumbs
1/8 teaspoon salt (optional)
1/8 teaspoon ground black pepper
lemon slices (optional)
Place chicken breasts in a plastic bag. Add lemon juice and garlic. Be sure the lemon juice and garlic mixes with all of the chicken. Seal and marinate in the refrigerator for 10 minutes.
Meanwhile, preheat oven to 425 degrees. Spray a 9-inch by 9-inch baking pan with non-stick cooking spray.
Drain the lemon juice from the chicken.
Pour cornflake crumbs onto a plate. Roll chicken in corn flake crumbs to coat evenly.
Arrange chicken pieces in the baking pan so that they are not touching. Top with any garlic remaining in the plastic bag. Sprinkle with salt and pepper.
Bake for 15-20 minutes or until chicken is cooked.
For an attractive presentation, serve topped with a thin slice of fresh lemon.

PORK CHOP SUEY
1 pound boneless pork tenderloin
2 cups sliced celery
1 cup sliced onion
1 cup fat-free beef broth*
1 tablespoon lite soy sauce
1/4 teaspoon salt (optional)
2 1/2 tablespoons cornstarch
1/4 cup water
1 tablespoon molasses
1/4 teaspoon ground ginger
1 can (16 ounces) bean sprouts, drained (or fresh)
Cut pork into 1-inch strips, 1/4-inch thick. Brown pork in a large skillet that has been sprayed with non-stick cooking spray.
Add the next five ingredients, cover and simmer for 5-10 minutes.
Meanwhile, in a small bowl, mix cornstarch, water, molasses and ginger. Stir into hot mixture and bring to a boil, stirring constantly until thickened. Add bean sprouts and heat thoroughly.
Serve over noodles or quick-cooking brown rice.

WHITE CHOCOLATE MOUSSE WITH BERRIES
1 small box (1 ounce) sugar-free instant white chocolate pudding
2 cups nonfat milk
2 cups nonfat whipped topping
2 cups fresh berries (or frozen, thawed) such as raspberries, blueberries, or huckleberries
In a medium bowl, mix pudding with milk. Stir constantly with a wire whisk for 2 minutes. Refrigerate for 5 minutes. Add whipped topping and mix well.
Layer mousse with berries in a serving bowl or individual parfait glasses. Be sure to save some berries for the top.
This is ready to eat or you can refrigerate it and serve later.

Fast and easy are the key words here! You should have a few items on hand first, such as:
1. Rice A Roni
2. Zatarain's Jambalaya Rice Mix
3. " " Dirty Rice Mix
4. Pasta
5. onion
6. marinara sauce
7. Cheeses, milk, half and half
8. spices
9. frozen or fresh veges
10. Meats and poultry, kielbasa etc.
With some of these staples on hand you can pretty much make whatever strikes your fancy! Here are some of my favorites:
1. Chicken Rice A Roni made according to package directions and cooled. Add mayonaise, curry powder, chopped celery, green onion, sliced green olives and diced chicken, ham or sausage.
2. Mac and Cheese with cream cheese, tuna, and frozen veges.
3. Jambalaya with kielbasa and shrimp
The list goes on!

Here's a simple one I made for dinner last night!
Baked Pasta
2/3 of a jar of your favorite spaghetti sauce (I like Bertolli's Marinara)
1/2 box favorite pasta (such as spirals, sea shells, wagon wheels)
1/2 lb. ground beef or sausage
sliced mushrooms
shredded mozzerella and parmesan
1. Cook the pasta according to directions on the box. Drain and set aside.
2. Saute the ground beef or sausage until browned and add mushrooms. Cook about 3-4 minutes. Add spaghetti sauce and heat until warmed through.
3. Add cooked pasta. Mix thouroughly and place in a baking dish.
4. Top with mozzerella and parmesan cheese. Cook at 375 for about 30-45 minutes or until cheese is bubbling and lightly browned. YUM!!!
Serve with garlic bread and salad -- delicious!

I love it and my favourite way is to drain it well and have it as is in sandwiches. It is expensive here so whole spears are treasured treats. This is my favourite way Rolls. Wrap Asparagus spears, or Seafood sticks, Shredded chicken, etc in a slice of buttered bread at the diagonal. For chunks of asparagus, a little cheaper, just mash and add some mayonnaise, spread on top of a slice of buttered bread, add some finely sliced lettuce and top with another slice of buttered bread, remove side crust an cut into 2 or 3 finger. Both of these should be neat and tidy to serve to guests to impress.

This is a dessert! not-baked-alaska
1 (12 ounce) loaf pound cake
2 cups chocolate ice cream, slightly softened
1 (8 ounce) tub COOL WHIP Whipped Topping, thawed
1/4 cup BAKER'S ANGEL FLAKE Coconut, toasted
Cut cake horizontally into 3 even layers. Place bottom cake layer on serving plate; spread with 1 cup of the ice cream. Repeat layers of cake and ice cream. Cover with top cake layer.
Frost sides and top of cake with whipped topping; sprinkle with coconut.
Serve immediately. Or, store in freezer until ready to serve.
Yield: 10 servings (Serving size: 10 servings)

God - do you lot do anything better than cutting things up and pour in a jar of cook in sauce ? That isn't cooking really. Try simplicity - lemon, garlic and olive oil works well or if you are going italian - tomatoes, garlic, basil and your meat / aubergines. NB. Season and serve with Parmesan.
Just don't try too many flavours / styles at once ! Have fun !

2 or 3 fist-sized potatoes, peeled and cut into chunks
3 or 4 leeks, chopped--white and light green parts only
1 liter (4 cups) broth of any flavor
200 ml (2/3 cups) light cream
Put potatoes, leeks, and broth in a big pan and boil covered until tender...15-20 minutes. Put all in blender with 1/2 cup of light cream...blend until smooth. Serve with croutons or bread for dunking...yummy! Even my kids will eat this!

You can make potatoes in oil, cut in little squares and then throw in some red and yellow sweet peppers and some black pepper. Pour it onto shredded chicken (Which takes like 10 minutes to make) and pour jalapeno sauce on it. Delicious food under 10 minutes.

Get a can of cheddar cheese, a can of chicken breast and jar of salsa and mix together in a pan until boiling. Spoon into the center of flour tortillas and fold over. Place them into a 350 degree oven for about 10 minutes....enjoy

Well for breakfast try broiled bacon, scrambled eggs- put in some seasoned salt, pepper and milk let them cook and put some cheese on it when they are done, waffles with "i can't believe it's not butter" and honey. DELICIOOOUUUSSS!
