my kids actually enjoys this, they are practically gone before I am completely done.

Recipe for Chocolate Chip Zucchini Bread


This is a delicious recipe for zucchini bread with chocolate chips and nuts. It makes two large loaves, so you might want to freeze one to enjoy in the future, or share one loaf with a friend.

Ingredients:

3 cups grated zucchini (Use a large box grater or a food processor.)
3 cups sugar
1 1/2 cups Canola oil
4 eggs
3 cups flour
1 1/2 tsp baking soda
1 1/2 tsp baking powder
1 1/2 tsp cinnamon
1 tsp salt
1 cup walnuts
2 cups chocolate chips


Directions:


Preheat the oven to 350 degrees


Grate 8-9 large zucchini until you have three measured cups of grated zucchini. (Note: Leave the skin on the zucchini.)


Mix the sugar, Canola oil and eggs until well combined.


Add the grated zucchini and stir.


In a separate bowl, mix the flour, baking soda, baking powder, cinnamon, and salt.


Add the flour mixture to the zucchini mixture, and stir well.


Add the walnuts and chocolate chips. Stir until combined.


Bake at 350 degrees for 50-60 minutes, or until a toothpick inserted in the middle comes out clean.

Ingredients:



6 large zucchini



1 pound angel hair pasta



4 cloves of garlic, minced



¼ cup olive oil



½ cup parmesan cheese



Salt



Pepper


Directions:




Cook the pasta in a large pot of boiling water for 4
minutes.

Shred the zucchini using a food processor or large
box-style cheese grater.

Heat the olive oil in a large skillet over medium
heat. Add the garlic and stir for one minute.

Add the shredded zucchini and cook for 3 minutes.

Add the pasta and parmesan cheese. Stir.

Season with salt and pepper and enjoy!

this is the only way my sister can get my nephew to eat it
INGREDIENTS
4 slices bread, cubed
1/4 cup melted butter
2 cups cubed zucchini
1 large onion, chopped
1 teaspoon garlic salt
1 egg, beaten
2 cups shredded Cheddar cheese
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
Place bread cubes in a medium bowl and pour melted butter over the bread. Add the zucchini, onion, garlic salt and egg; mix well. Transfer the mixture into a 9x13 inch baking dish and top with the cheese.
Bake, covered, in preheated oven for 30 minutes. Then uncover the dish and bake for another 30 minutes.

INGREDIENTS
1/2 cup vegetable oil
1 1/2 cups white sugar
2 teaspoons vanilla extract
2 cups all-purpose flour
1/2 cup unsweetened cocoa powder
1 1/2 teaspoons baking soda
1 teaspoon salt
2 cups shredded zucchini
1/2 cup chopped walnuts

6 tablespoons unsweetened cocoa powder
1/4 cup margarine
2 cups confectioners' sugar
1/4 cup milk
1/2 teaspoon vanilla extract
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch baking pan.
In a large bowl, mix together the oil, sugar and 2 teaspoons vanilla until well blended. Combine the flour, 1/2 cup cocoa, baking soda and salt; stir into the sugar mixture. Fold in the zucchini and walnuts. Spread evenly into the prepared pan.
Bake for 25 to 30 minutes in the preheated oven, until brownies spring back when gently touched. To make the frosting, melt together the 6 tablespoons of cocoa and margarine; set aside to cool. In a medium bowl, blend together the confectioners' sugar, milk and 1/2 teaspoon vanilla. Stir in the cocoa mixture. Spread over cooled brownies before cutting into squares.

Slice zuchinni horizontally and lay in a greased baking dish. Sprinkle with salt and pepper. Sprinkle with a little garlic powder. Mix Italian Bread Crumbs with parmesan cheese and liberally sprinkle over the zuchinni. Top with grated Italian Cheese Blend and dot with butter. Cover and bake for 45 minutes in a 350 degree oven. Remove cover during last 5 minutes to allow cheese to crisp slightly. Yum!

I cut the zucchini into "hash brown" slivers and put in a tupperware bowl. I add some olive oil and some parmesan cheese, shake it up in the bowl, put it all on a cookie sheet and bake until crispy! It's really yummy and a great side in place of fries, etc.

A really yummy recipe is you steam the zucchini and then pour over it garlic sauce, which is mashed garlic mixed with water and yogurt to make a thick consistency. Very good to have around a barbecue as well.

My kids call this Green Soup...and eat it with gusto!

Roughly chop 2 big zucchinis. Just cover with water...add a bullion cube...boil covered until just soft. Then put it all in a blender along with 8 of those little cheeses that they used to serve on airplanes...blend until smooth. Serve with croutons sprinkled on top or bread for dunking.

Tempura mix follow directions. Also ratatouie is good. Also, sweat sliced zucchini, add tomato sauce and cook a few minutes more.

I slices in an egg bath then do the italian seasoned bread crumbs and flour mixture, lightly fry in a little olive oil and the kids love them.
