The answer depends upon their tastes. For several years, I worked as a chef. Grilling salmon is almost always a winner.
As for seasoning it, you have many possibilities. A couple:
Ancho Chile BBQ -- Take some good BBQ sauce then 'doctor' it with some dark brown sugar, orange juice, and carmelized onions. Heat it up on the stove and add the ancho chile powder to taste. Be sure not to overdo it--ancho chile is fairly hot.
"Summer Grill" Marinade --
Ingredients:
1cup Olive Oil
1/2 cup fresh squeezed Lime juice
1/2 medium Red Onion, minced
1/4 cup fresh Cilantro, minced
1/4 cup Brown Sugar
4 dashes Tabasco Sauce
1/2 teaspoon salt
Pinch or two of Black Pepper
Preparation:
Vigorously whisk ingredients together in a bowl. pour into a shallow dish large enough to hold 4 salmon steaks. Place salmon in dish, making sure each one is well coated. Cover and marinate in refrigerator for 30-45 minutes. Fire up the grill to 350. Cook salmon until it is medium-well(light pink all the way through). Serve immediately.
Suggested sides:
Grilled marinated Summer Vegetables
- Zucchini Squash
- Yellow Squash
- Sweet Red Peppers
- Red Onion
- Balsaminc Vinaigrette Marinade
Pan Roasted New Potatoes with Garlic
- Redskin Potatoes
- Minced fresh Garlic
Scrub and Quarter them. Put 3Tablespoons olive
oil in saute pan and heat on Medium High. When
it just begins to smoke, carefully add potatoes.
Brown them for about 10 minutes. Add garlic,
salt and pepper. Potatoes are done When tender
all the way through.
Beverage: Fresh-squeezeed Lemonade -OR-
A good Chardonnay

A basic marinade that is great on any fish is a store bought italian dressing...always great. But if you want an easy and yummy way to cook the salmon, just put each steak in a tinfoil tent with butter, some chopped onion, half a lemon, ground pepper and some fresh dill or cilantro if you have it. Place the tents in the oven or on the bbq for about 7 - 10 minutes...and voila...easy, no mess, delicious salmon.

This is wonderful, and so easy, they will love you for it!!
Foil Wrapped Side of Salmon with Lemon and Rosemary
Yield: 6 servings
1 whole side salmon, scaled, with skin, pin bones removed (2 1/2 to 3 pounds)
2 teaspoons kosher salt
1 teaspoon freshly ground white pepper
1 teaspoon coarsely chopped fresh rosemary leaves
1 lemon, very thinly sliced
1/2 small red onion, thinly sliced
8 cloves garlic, thinly sliced
1/4 cup extra-virgin olive oil
Preheat the oven to 425 degrees F. Rinse salmon fillet under cold running water and pat dry. Cut a piece of foil long and wide enough to encase the salmon when folded over the center and folded up on the ends. Position the foil on a large baking sheet and place the salmon in the center of the foil, skin side down. Sprinkle the salmon with the salt, pepper, and rosemary. Place the lemon slices over the fish fillet along with the sliced onion and garlic slivers. Drizzle the fillet evenly with the olive oil and fold the edges of the foil up over the salmon and crimp to seal. Fold the edges together on both ends to create an airtight package. Bake the salmon for 15 minutes, or until just cooked through but still moist. Serve immediately, using a large metal spatula to portion fish. Serve some of the accumulated juices spooned over the fish.

Try This: Mix together some Brown Sugar, Paprika (smoked if you can find it), Sea Salt, Ground Black Pepper and Thyme.
Heat 2 Tbs of olive oil in a cast iron skillet over medium heat.
Coat each steak with dry rub mixture. Cook salmon on both sides; watch carefully so that the rub does not burn. reduce heat as needed.
Serve atop creamy white polenta (buy a package and follow directions) and a sautee of spinach (just a splash of water and a little butter and sea salt). Top with cooked mushrooms (in butter with lemon juice and parsley).
In center of each plate place the soft polenta. On top of that drop some spinich. Then add the salmon right on top of those! Finish with the mushrooms. Yum.
Remember: Buy Organic produce and your Salmon from a good source (wild-caught if possible)...

Try a citrus blend seasoning the kind you can shake on prior to cooking the Salmon steaks( found in the spice aisle in the store )and you were not stupid for inviting the g/f's parents over for dinner and offering salmon alot of people think of salmon as a impressive kind of food which you are more than likely trying to make a good impression on them you can serve a rice pilaf with the salmon ( you can find a rice pilaf mix in the store near the rice and it is usually a quick dish)Good luck

One way is to poach them in water, put a sliced carrot/onion/bay leaf in the water.
Make a sauce of plain yogurt, dill and finely chopped cucumber that your guests can put on themselves.
Another is to marinate the salmon in a couple tablespoons of sesame oil + 1/3 cup soy sauce + 1/3 cup cooking sherry + tablespoon or so of ground/grated fresh ginger. Cook these on a BBQ grill, serve with rice and some grilled spring asparagus. You can fancy up the salmon by sprinkling sesame seeds on it just before you serve it.
If you want to go crazy, you could get a cedar blank and use a BBQ rub for fish. You can buy the rubs in most grocery stores where ever the BBQ sauces or spices are located.
The comment above regarding maple syrup is another one, I forgot. Use real maple syrup and brush on while cooking under a broiler. Serve with mashed potatoes. This one is really good and easy.

Salmon is quite versatile in that you can steam it, cook it in the oven or fry it. It depends on the cut of salmon you are working with but all of these are good.
Frying it, I would do some breadcrumbs and add some dill, parsley, black pepper. Then coat the skin with the breadcrumbs and fry it.
Or if you have steaks, do individual foil wraps and bake them in the oven. Individually add some wine, some spring onion, a bay leaf, some dill and bake it all in the oven for around 15 minutes.

Marinate salmon in fresh dill, thinly sliced garlic, extra virgin olive oil, sea salt and freshly ground pepper. After a couple of hours, pan fry over medium heat. Make a sauce with fresh dill, fresh lemon juice and mayonnaise, serve separately. If you can find fresh asparagus that would be a perfect side dish; if not available, try broccoli or green beans. Garlic bread to top it off. Ummmm ummmm good!

You certainly can! Put half an inch of water in a flat pan (frying pan, saute pan,omelette pan) and season to taste. Put your salmon in while the water is cold, bring it to a gentle simmer. Depending on size and thickness, anywhere between 6 and 10 minutes should see you right. To go with them, I like the old fashioned baby new potatoes and petits pois my self, but anything not too strongly flavoured will do nicely. Bon Apetit.
