Also, is it possible to build muscle mass while not consuming a lot of carbs? I was told otherwise, but I thought that protein was more important for building muscles than carbs.

simple carbs are found in fruits and honey, etc
complex carbs are found in starchy foods like potatoes, etc

fruits contain simple sugars while foods like whole oats, whole grain rice, lentils, beans would all be complex carbohydrates

protein is only part of the puzzle when it comes to increasing muscle mass. the body needs plenty of carbs for energy to that protein can be spared and used for muscle building. for most 40% protein, 40% carbs and 20% fats are good ratios to use. for those that are very active or have fast metabolism (low body fat despite eating everything in site). then anywhere from 20% protein, 60% carbs and 20% fats
