To explain how a war works: Each weekend we will have an open group where everyone can post recipes or traditions to the group from Friday through Sunday evening. Last night I made this recipe I found on Campbells recipe website. It was pretty good. And SUPER easy! Here's the recipe.
One-Dish Chicken & Stuffing Bake
From: Campbell's Kitchen
Prep Time: 10 minutes
Cook Time: 30 minutes
Serves: 6
This easy version of Grandma's specialty features seasoned stuffing and chicken baked in a creamy mushroom sauce.
Ingredients:
1 1/4 cups boiling water
4 tbsp. butter OR margarine, melted
4 cups Pepperidge Farm® Cubed Herb Seasoned Stuffing
6 boneless chicken breast halves
Paprika
1 can (10 3/4 oz.) Campbell's® Condensed Cream of Mushroom Soup OR 98% Fat Free Cream of Mushroom Soup
1/3 cup milk
1 tbsp. chopped fresh parsley OR 1 tsp. dried parsley flakes
Directions:
MIX water and butter. Add stuffing. Mix lightly.
SPOON stuffing along center of 3-qt. shallow baking dish. Arrange chicken on each side of stuffing and sprinkle with paprika.
MIX soup, milk and parsley. Pour over chicken. Cover.
BAKE at 400°F. for 30 min. or until done.

When pressed for time Breaded Chicken Breasts are easy, just buy the can of ready to use bread crumbs, they come in plain or Italian Style. You can even stuff with a slice of Mozzarella cheese. Boil Pasta and just pour over Italian Sauce and you have yourself a Quick Chicken Parmesan! Pork Chops with Stuffing (stove top) your favorite Vegtable and maybe some quickj-instant Mashed Potatoes. We're having Shepard's pie tonight. But for a quick meal get a package of sliced mushrooms and a jar of alfredo (I like Classico Roasted Garlic). While you're boiling about 12 oz. of pasta, saute the mushrooms in some butter with some garlic. Dump in the sauce and a handful of Parm and some pepper. When the pasta's done, the sauce will be too. Toss it all and you have dinner!

CHICKEN PARMESAN PASTA
1 1/2 pounds boneless skinless chicken breast halves
2 egg whites
1 cup Italian seasoned dry bread crumbs
3 cups spaghetti sauce, divided
1 1/2 cups KRAFT 2% Milk Shredded Reduced Fat Mozzarella Cheese
1/4 cup KRAFT 100% Grated Parmesan Cheese
1 teaspoon dried oregano leaves
6 ounces spaghetti, cooked, drainedDip chicken in egg whites, then in bread crumbs, turning to evenly coat both sides of chicken. Place in greased 13x9-inch baking pan.
Bake at 400 degrees F for 20 to 25 minutes or until chicken is cooked through. Top with 2 cups of the spaghetti sauce and cheeses. Sprinkle with oregano. Bake an additional 5 minutes or until mozzarella cheese is melted.
Serve over hot pasta tossed with remaining 1 cup spaghetti sauce, heated.
Yield: 6 servings (Serving size: 6 servings)

On Sunday afternoon, when you have time to sit down with your family make out a quick menu for the week. Then you know what to buy at the grocery store and you are not trying to figure out what to make during the week when you are thinking about too many other things. I used to let the kids each pick a day and they got to choose what was for dinner, it had to be healthy. Made the kids stop complaining about what was for dinner since everyone had a day and input on the menu and took the guess work out for me.

FYI- Tonight is turkey chili with corn bread. Goes in the crock pot and I don’t have to think about it.

Get a crock pot. You can cook a lot of things in it. I used a recipe that I got from the Food Network and it turned out really good. Cut up acorn squash (1-2 small), sweet potatoes (2), place chicken breasts or some other boneless chicken on top and make a glaze of Hoisen sauce (Asian BBQ Sauce from the Oriental section of your grocery store) A tablespoon of maple syrup and a small jar of orange marmalade (I used apricot preserves) and place on low for 6 hours or high for 3-4 hours.

No matter how much I love to cook... there are still some convenience meals I adore.

At the grocery store they have packets of flavored rice, there are a lot of brands, but my favorite is Lipton. I get one of those, and I make it according to package directions, but with milk instead of water. I then toss in a couple packs of chopped veggies--carrots, mushrooms, peas, whatever sounds good. Meanwhile I cook some chicken up quickly in a wok, just with light pepper, it doesn't need much seasoning. I chop it up and mix it in with the rice and veggies. It's nice and creamy and quick and not too bad for you as far as Nutrition goes.

Try this
CASSEROLE
1 lb lean ground beef
1 medium onion, chopped
1 bell pepper, chopped
1 can red beans, drained
1 can chicken stock
1 cup Uncle Ben’s converted rice

In a heavy skillet, cook the beef with the onion and bell pepper until the meat has lost its color. Drain off any excess grease. Stir in beans and chicken stock and bring to a boil. Add rice and return to a boil. Reduce heat to a simmer, cover and allow to cook about 25 minutes. Turn off and allow to stand 5 minutes. Add salt and black pepper to taste. Serve hot.

This can be prepared the night before in 15 minutes and slow cooked in a crock pot the next day........use a large cooking bag..place a roast (chuck or rump)...place it in the bag with seasoni it with salt and garlic powder....slice an brown onion and put slices of top of the roast...peel and chop potatoes and carrots add whole mushrooms...then top with golden mushroom gravy...seal the top and polk holes in the bag. Now put the stuffed bag in the crock pot and refrigerate it, the next morn put the crock pot on, go to work and when you come home its done. Good...healty...and easy meal.

if you have a crock pot place a small onion( optional for those who dislike onion or allergic that has been chopped up in to very small piece in it then add some garlic powder and onion powder then place one small package of Italian sausage into the crock pot with a large jar of your favorite spaghetti sauce ( enough to cover the sausage) cover with the lid and cook on low for about 5 hours the sausage will be very tender and can be served on a hot dog bun or a plate with other side items
