Name feature is one of Excel good features
So the main command is Define in
Insert > Name > Define
that command will enable you to create new name
Insert > Name > Paste
Is used to insert a name from the name's list into the current selected space
Insert > Name > Create
Will enable you to create bunch of names at the same time based on a table headers (selected table) and column
Insert > Name > Lable
Will enable you to create Lable ranges to your sheet (Same as names but strickted to each sheet)

If I understand you correctly, you want to name a range in Excel.
Select the data you want to name - it will become highlighted
click Insert
click Name
click Define
here, you will give this data a name
it will appear at the top left of the window in the formula line
when you want to merge only these data with a Word document or labels, and are asked for the range, you type the name you entered above.
