When it comes to amps, mono comes from the word one, single, etc. It means that the amp has a single channel output, all the sound information goes to the single output. If is 2 channel is like having a stereo player in your house, some sounds came from the left others from the right creating the "stereo" effect. If is 4 channel then you have the right and left , separated by front and rear. If is 5 channel usually means an extra channel for connecting a sub.

A MONO amp is 1 channel
a 2 channel is 2 obviously with a left and right audio channel, however, some 2 channel amps are bridgeable to mono, this will drop your ohm load by half, and the amp must be stable to that load, which will be determined by the ohm load of the sub you have, alpine type r subs can have dual 4ohm or dual 2ohm voice coils, to bridge the sub on a 2 channel 2ohm stable amp, you have to have a dual 2 ohm wire in series on the sub, and parallel on the amp, this is the usual case

In the context of hooking them up to subwoofers, here's the difference:
2-channel amps usually work best if you can wire the subwoofer(s) into a 4-ohm load. Mono amps usually work best if you can wire the subwoofer(s) to a 2-ohm load.
In the case of an Alpine Type-R, they're available with dual 4-ohm voice coils or dual 2-ohm voice coils. If you have the 4-ohm DVC Type-R, it can be wired as a 2-ohm load, so a mono amp will probably work best. If you have the 2-ohm DVC Type-R, then it can be wired as a 4-ohm load, so a 2-channel amp will probably work best.

in addition to what others have said, it's my understanding that a mono amp is the only type that is available in a Class D. which i understand to provide more power (watts), while requiring less power (amps). which helps save the cars electrical system, at least to some degree. Typically Class D amps are not full range (10-500hz) or something like that, specifically for Sub use only.

Mono is 1 output.
2 channel is 2 outputs...right and left.
4 channel is 4 outputs...front, right and left...rear, right and left.
