Well, you can't really age a steak in your fridge!! Aged beef is usually done to a whole carcass that is hung at about freezing temps with good air movement and moderate humidity. The cooling area has to be VERY clean. Right around 10 days from slaughter is considered aged beef. You really should get this from a reliable butcher who has the right conditions. Can be hard to find but the flavor is very "beefy'.
