is it true that toasting nuts will change the oil/fats inside it to bad ones?
one day on "Oprah" there was a doctor saying that eaing raw nuts is better than toast them and he should some white mixture and said that is how the nuts oil become after toasting it.
is that issue tre?
any info?

No it isn't true.... eating a small amount of toasted or roasted nuts is going to do you very little harm. ANYTHING that you eat too much of, has a chance to harm you. And roasted nuts are a better alternative ( and lower in fats) than a piece of cake.

The key is moderation - if you don't get too heavy handed with the roasted nuts, you're actually eating something that is quite good for you.

It makes sense that toasting nuts would cause oxidation of some of the surface oils in nuts. I don't know if this is bad and I imagine that doctor doesn't really know either. However, I also hold the prejudice that raw nuts are better than toasted ones, but it's just a prejudice not based on any real evidence.
