We really can't do much on our side of the Internets. Your going to have to educate her yourself.

Get some literature. Show your mom the same stuff that you discovered that drove you to veganism and hopefully she will empathize. If not, ask if you can do your own grocery shopping and hone your cooking skills. Try to make your veganism as convenient as possible for your family. Try cooking a tasty vegan meal you can both enjoy!

Louis L, that maddox argument is ridiculous. Seriously. What do you think animals eat?
And additionally, the animal product industry is FAR from what one could possibly call taking care of an animal. As evidenced by this VVV

Is she misinformed or just sarcastic? My dad's way of helping me out when I became vegetarian was getting turkey sausage instead of regular. We had to go through the process a few times before it made sense to him.
Vegans usually fend for themselves in the kitchen if they live with carnivores...my mom is a great cook, but almost anything she makes is off limits. Why not offer to help make dinner and cook some veggie dishes? You can eat what you make and it'll give her a little less to do.

I think you need to sit down with your Mother and explain why you think you are now a Vegan. But are you a vegan or a vegetarian and do you know the difference?
A vegan does not even wear any shoes or clothing made from animal biproducts including leather shoes, etc. There are several types of vegetarians, including those that do not eat beef or pork but may eat certain fish and range-raised poultry, lacto-vegetarians who eat eggs and milk products or biproducts, etc.
Though your age does not make a difference of your choice of diet, you must realize that you should not expect your mother to fix you a different meal from the rest of the family. You can have her double the size of the veggies, etc., but make sure that you get protein (if you don't eat fish, poultry or dairy) like nuts, beans and rice, etc.
Just talk with her and things will work out!

Just because you have a little turkey and fish doesn't mean you should skip your veggies. Do you realize how many animals are killed everyday in the harvesting of vegetables. What would we do if all the cows, chickens, turkeys, pigs were all turned loose? How would we take care of them? Eating them is caring for them. They would eat you if given the chance. You should eat the turkey and fish because if it goes to waste those animals would have died for no reason. Do you not care they would have died for no reason? Why let them go to waste? If you love animals you will eat them to protect them from a world they can no longer live in. There is no space or natural environment left to support their needs. Especially when vegans are chopping down animal's environment to feed their greedy self-serving luxury of eating all the vegetables that are the environment of animals. Vegans are eating all the vegetables that are ear marked for animal food. Vegans should eat chemicals from mines to really show their love for animals. Vegetables are for animals to eat. Greedy vegans with petroleum made products that are made from dinosaur remains and pointing a finger. Do vegans know they live in houses that are built from wood that was an animal's environment? No guilt there. Why don't vegans protest the building of their homes?
No offense but I think you are lying about your mom offering turkey and fish. I have never heard of eating that combination. Sounds like a made up story.

I guess she doesn't get it but Turkey and fish are not that bad for you, health wise, as long as they are not breaded or fried.
The human body does need some of these... just not fast food versions of them.
